1 teaspoon kosher salt
1 teaspoon sugar
1 teaspoon baking powder
2 tablespoons cold unsalted butter, cut into 1/4-inch cubes
1/3 cup cold water, plus additional as needed

Steps:

  • Adjust oven rack to middle position and preheat oven to 375°F (190°C). Combine flour, salt, sugar, and baking powder into a medium bowl and whisk to combine. Add butter and using a pastry cutter or fingertips, work into flour until it resembles coarse meal. Add water and lightly knead dough until it comes together into a ball.
  • Set dough on a lightly floured surface and cover with an overturned mixing bowl. Allow to rest for 15 minutes.
  • Roll dough out on a well floured surface to a thickness of 1/8 inch. Cut dough into 1/2-inch squares, rectangles, or diamonds. Transfer to a parchment-lined baking sheet and space the shapes out as much as possible.
  • Bake until crackers are showing color around the bottom edges, about 15 minutes. Turn oven off and crack the door open about 8 inches. This is similar to the other recipes posted here, but with a couple changes. I went ahead and posted it, as my Grandma made these every year at Christmastime and they are extremely addictive!!! I guessed on the servings...if you're like me, you make a pig of yourself and don't share, so it's a 1 serving recipe!!! ;) **Note, due to a few reviewers saying these were too oily, I changed the oil amount!**

2 sleeves saltine crackers (about 66)
1 1/2 sticks unsalted butter, melted
2 pints shucked fresh oysters in their liquor, drained and 1/4 cup liquor reserved
1/3 cup heavy cream
2 teaspoons fresh thyme leaves
2 tablespoons finely chopped flat-leaf parsley leaves
Lemon wedges, for serving

Steps:

  • Preheat oven to 400 degrees with rack in top third. Pulse saltines in a food processor until coarsely ground. Add butter and pulse just to combine. Spread a thin layer of crumbs in a 9-by-13-inch baking dish. Top with half the oysters.
  • Stir together reserved oyster liquor and cream. Drizzle half the cream mixture over oysters. Sprinkle with half the remaining crumbs and all the thyme. Repeat layering with remaining oysters and cream mixture.
  • Stir parsley into remaining crumbs and sprinkle evenly over top. Bake dressing until bubbling and top is golden brown, about 45 minutes. Serve hot, with lemon wedges for squeezing.
