Unsalted butter, for the dish
2 teaspoons kosher salt
1 pound elbow macaroni with ridges
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons all-purpose flour
1 teaspoon kosher salt
2 cups milk
2 cups grated sharp Cheddar
1/2 cup breadcrumbs
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.

Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Add the drained macaroni to the cheese sauce and mix thoroughly.
  • For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
  • Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.

Tips:

  • Use a quality cheese blend. A combination of sharp cheddar, Parmesan, and mozzarella is a classic choice, but you can experiment with different cheeses to find your favorite blend.
  • Cook the macaroni al dente. This means that it should be cooked through but still have a slight bite to it. Overcooked macaroni will make your mac and cheese mushy.
  • Use a flavorful sauce. The sauce is what really brings the mac and cheese together, so make sure it's packed with flavor. A simple cheese sauce made with milk, butter, and flour is a good starting point, but you can also add other ingredients like vegetables, meat, or spices.
  • Bake the mac and cheese until it's golden brown and bubbly. This will ensure that the cheese is melted and gooey and the macaroni is cooked through.
  • Let the mac and cheese rest for a few minutes before serving. This will help it to set up and make it easier to serve.

Conclusion:

Grandma's oven-baked macaroni and cheese is a classic comfort food that is sure to please everyone at your table. With its creamy, cheesy sauce, tender macaroni, and golden brown crust, it's the perfect dish for a weeknight meal or a special occasion. So next time you're looking for a delicious and easy recipe, give this one a try. You won't be disappointed!
