MY MOM'S MULLIGAN STEW

My Mom's Mulligan Stew image

This is so simple and so good. When I grew up and left home I would come back for visits and Mama would have a big pot of this made before I got there. Now that she is in a nursing home, I bring it to her. The seasonings are simple so you may want to adjust or add to your own taste. I always serve this over rice but it is fine on its own as well.

A friend gave me this recipe for this hearty comfy stew several years ago and I make it often. It is great on a chilly winter's night. With only a few ingredients, this thick stew is easy and inexpensive. Pairs well with some crusty bread or cornbread. Watch closely at end of cooking time so does not scorch though.

Tips:

  • Choosing the right cut of beef is essential for a flavorful stew. Chuck roast or brisket are both good options, as they have a good amount of marbling and will become tender when cooked slowly.
  • Browning the beef before adding it to the stew pot helps to develop its flavor and create a richer broth.
  • Don't be afraid to add vegetables to your stew. Carrots, celery, onions, and potatoes are all classic additions, but you can also try adding other vegetables like parsnips, turnips, or sweet potatoes.
  • Use a variety of herbs and spices to flavor your stew. Common choices include thyme, rosemary, bay leaves, and black pepper. You can also add a bit of chili powder or cumin for a Southwestern twist.
  • Let the stew simmer for at least 1 hour, or until the beef is tender and the vegetables are cooked through. The longer you simmer the stew, the more flavorful it will be.
  • Serve the stew with a side of crusty bread or mashed potatoes. You can also top the stew with a dollop of sour cream or yogurt.
