This is my all time favorite dish, that my Grandmother served in her restaurant. She would serve this with real mashed potatoes and creamed corn.

2 lbs ground chuck
4 tablespoons Worcestershire sauce
1/2 cup grated onion
2 eggs, slightly beaten
2 cups breadcrumbs
1 cup milk
1 cup tomato juice (for topping) or 1 cup ketchup (for topping)
salt and pepper

Steps:

  • Mix everything together very well and shape into 2 loaves.
  • You can either pour the tomato juice or ketchup on top before baking, or apply the sauce to the top of the meat loaf 10 minutes before it is done.
  • Bake at 350 degrees for about 45 minutes to 1 hour or until done.
  • Makes 2 loaves.

My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

2 pounds lean ground beef
1 cup old-fashioned oats
1 (8 ounce) can tomato sauce
2 large eggs, slightly beaten
2 tablespoons minced dried onion
¼ teaspoon granulated garlic
¼ teaspoon salt
⅛ teaspoon ground black pepper
¼ cup ketchup, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.

1/2 milk
1/2 cup ketchup
1 1/2 Tablespoons Worcestershire sauce (GF Option - use a gluten-free brand)
1 teaspoon dried mustard
1 Tablespoon basil, fresh or dried
1 Tablespoon oregano, fresh or dried
1 teaspoon sea salt
1 teaspoon ground black pepper
GLAZE
1/2 cup ketchup
2 Tablespoons dark brown sugar
1/4 teaspoon dried mustard
