GRANDMA'S BUTTERMILK PANCAKES

Grandma's Buttermilk Pancakes image

"I always knew my grandmother's buttermilk pancakes were special," says Christopher Hirsheimer. "I loved them, and I loved to help her in the kitchen. My first job was to separate the eggs for her. Then I'd whip up the whites into thick, billowy mounds. Finally, she would start heating the griddle and would test it by flicking water on it, and when little beads danced across the hot metal, it was time to begin. Standing at her post at the stove, she flipped batch after batch until our big hungry family was fed."

Time 30m

Yield 4 servings

Number Of Ingredients 10

2 large eggs, separated
1 cup buttermilk
2 tablespoons melted butter, plus more butter for serving
1 cup cake flour
1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
vegetable oil
Maple syrup, for serving

Steps:

  • Lightly grease a cast-iron pan or griddle with vegetable oil, wiping off excess with a paper towel. In a medium mixing bowl, whisk the egg yolks into the buttermilk, then whisk in the butter. In another bowl, sift together the flour, sugar, baking powder, baking soda, and salt, then sift these dry ingredients into the buttermilk mixture. Lightly whisk together until the batter is just mixed (a few lumps won't hurt). In a clean mixing bowl, beat the egg whites with a whisk until soft peaks form. Use a rubber spatula to fold them into the batter. Don't overwork the batter; keep it light and fluffy.
  • Heat the griddle over medium-high heat until hot. (To test, flick a bit of water onto the pan; it'll bead up and dance if it's hot enough.) Pour about 1/4 cup of batter onto the griddle. Cook until little holes appear on the surface and the cooked side of the pancake is golden brown (lift the edge to check), about 1 minute on each side. Don't worry if the first one or two don't turn out well-that's normal. Continue making pancakes, regreasing the pan as needed. Stack pancakes on a plate, slather generously with butter, and pour on a few good glugs of real maple syrup. Makes 4 batches of 3 pancakes (4" in diameter).

GRANDMA'S LIGHT AND FLUFFY PANCAKES

Grandma's Light and Fluffy Pancakes image

Time 15m

Number Of Ingredients 7

2 eggs
1 to 1 1/2 c milk
2 1/3 c self-rising flour
2 Tbsp granulated sugar
1/4 c 1/4 cup vegetable oil or melted shortening
1 tsp vanilla extract
SPECIAL NOTE: YOU MAY NEED TO ADJUST THE AMOUNT OF MILK TO REACH DESIRED CONSISTANCY. A THINNER BATTER WILL PRODUCE THINNER PANCAKES.

Steps:

  • 1. In a mixing bowl, beat eggs on high speed 5 minutes or until thick and lemon colored. Stir in remaining ingredients (use a wooden spoon or spatula, not a mixer).
  • 2. Pour batter from 1/4 cup measuring cup onto a medium-hot, lightly greased griddle. Bake until puffed and bubbles begin to break. Turn and bake other side until golden brown. Makes 12 to 14 pancakes.
  • 3. Serve hot with your favorite kinds of syrup and/or toppings. You may also stir in blueberries, chocolate chips or nuts to the batter before cooking.

OLD-FASHIONED PANCAKES

Old-Fashioned Pancakes image

This is the most basic recipe for a slightly thick pancake. It's just as easy to make a quick homemade batter as it is to open a box mix, which needs ingredients added to it anyway. And using organic ingredients seems to give the pancakes a cleaner and truer flavor. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

Yield Makes 2 cups batter; 16 4-inch pancakes

Number Of Ingredients 9

1 1/2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon coarse salt
2 3/4 teaspoons baking powder
1 large egg, lightly beaten
1 1/4 cups milk
3 tablespoons unsalted butter, melted, plus more for serving
Vegetable oil, for the griddle
Pure maple syrup, warmed, for serving

Steps:

  • Place a heat-proof platter into a warm oven (at 200 degrees).
  • In a large bowl, whisk together the flour, sugar, salt, and baking powder. Make a well in the center of the flour mixture. Add in the egg, milk, and 2 tablespoons of the butter. Whisk from the center, slowly incorporating the flour. Rest the batter for 10 minutes.
  • Heat a large well-seasoned cast-iron skillet or favorite griddle over medium-high heat. Swirl the remaining tablespoon of butter in the skillet (or use oil to coat the griddle) and immediately pour in 1/4 cup of batter for each pancake. When bubbles rise to the surface, flip the pancakes, slightly reduce the heat, and cook until the bottoms are golden and the centers are cooked, about 1 minute. (Rarely does the first pancake work because it takes a bit of time to get in the groove with the heat, fat, and batter.)
  • As the pancakes come out of the skillet, place them on the warm platter in the oven until ready to serve. Serve a stack of 3 pancakes, topped with more butter and the maple syrup.

1 large egg
3/4 cup milk
1/4 cup shortening or butter, melted

Tips:

  • Use buttermilk. Buttermilk reacts with the baking soda to create a light and fluffy pancake. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
  • Don't overmix the batter. Overmixing the batter will make the pancakes tough. Mix just until the ingredients are combined.
  • Let the batter rest. Letting the batter rest for 5-10 minutes before cooking will allow the gluten to relax, resulting in lighter and fluffier pancakes.
  • Use a hot griddle. A hot griddle is essential for cooking pancakes evenly. Make sure the griddle is hot enough before adding the batter.
  • Don't flip the pancakes too soon. Wait until bubbles form around the edges of the pancakes before flipping them.
  • Serve immediately. Pancakes are best served hot off the griddle. Serve with your favorite toppings, such as butter, syrup, fruit, or whipped cream.

These light and fluffy pancakes are the perfect way to start your day. They're easy to make and can be customized to your liking. With a few simple tips, you can make perfect pancakes every time. So what are you waiting for? Give this recipe a try today!
