8 tbsp unsalted butter (room temperature)
¾ cup light brown sugar ((160g))
2 large eggs
1/4 cup buttermilk
2 cups all purpose flour ((240g))
½ tsp salt
1 tsp baking soda
3 ripe bananas (mashed (approx 1½ cups))

Steps:

  • Preheat oven to 375℉. Spray loaf pan with baking spray or rub with butter and flour. Set aside.
  • In a large mixing bowl cream the butter.
  • Add in the sugar and cream the sugar and butter together using medium speed. Will be light and fluffy.
  • Add in the eggs and buttermilk. Mix until combined.
  • Mash bananas and add into the batter.
  • In a separate bowl combine the dry ingredients: flour, salt, and baking soda. Stir to mix. Slowly add to the wet ingredients while mixing.
  • Pour batter into the prepared loaf pan.
  • Bake for approximately 30 minutes covered with loosely with foil. Remove then continue baking for an additional 30 minutes or until fully cooked, top will be a golden brown. (foil helps to prevent too much browning)

1 cup margarine, softened
1 teaspoon vanilla extract
4 eggs
3 ½ cups all-purpose flour

6 very ripe bananas, mashed

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking pan.

There is something magic in its simple ingredients, and when I experiment with it, I always find I still like the original...

1/2 c butter
1 c sugar (i've tried brown (love brown), and it works, but white is best in this recipe. it lets the other favors shine)
2 eggs
1/2 tsp salt
1/2 tsp baking soda
1 1/2 c (takes about 3) over ripe bananas, mashed
2 c flour
1/2 c nuts, optional (i like pecans)

Steps:

  • 1. Cream butter, sugar & eggs. Add salt & baking soda; mix well. Beat in the bananas. Add the flour. Stir in nuts if using.
  • 2. Pour into a LARGE buttered loaf pan (mine measures 4 1/4" x 8 1/4" on the bottom, 5 1/2" x 9 1/2" on the top, 2 3/4" tall.) If pan is not big enough, it will not cook all the way in the center. If you have a smaller pan, don't use all the batter in one pan. The recipe says to let sit at room temp. For 20 min. I never do.
  • 3. Bake at 350 degrees F for about 45- 60 min., until toothpick inserted in the center comes out clean. Let cool 5-10 minutes before loosening sides and inverting, letting it cool the rest of the way on a cooling rack.
  • 4. Great out of the oven, even better the next day, if it doesn't get eaten first! Wrap up after it cools completely to keep it moist.

This bread recipe was from my husband's grandmother. It is so simple to make and always comes out great. The original recipe did not have the vanilla in it, but I always add it. If I have bananas that are ripe, but I am not ready to make the bread, I just plop them in the freezer, peel and all. No need to put in a bag. They will turn black, but the insides will remain good and will be perfect for the bread. Just remove from the freezer, peel and add to the mixture.

1 cup sugar

This is my one of my grandmothers recipes for banana nut bread, it is easy and it is moist and delicious!

4 cups flour
4 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
2 cups sugar
1 cup Crisco (Butter Flavor)
4 eggs
2 cups bananas (Ripened)
2 teaspoons lemon juice
1 1/2 cups walnuts (Chopped)

Steps:

  • Sift flour, baking powder, salt and sugar together in a bowl.
  • Add eggs, Crisco and 1 cup of the ripened, mashed bananas.
