1 tablespoon plus 2 cups butter, divided
2 cups sugar
1 cup slivered almonds
1/4 cup water
1 teaspoon salt
1 teaspoon vanilla extract
1 package (11-1/2 ounces) milk chocolate chips, divided
1/2 cup finely chopped almonds

Steps:

  • Grease a 15x10x1-in. pan with 1 tablespoon butter; set aside. In a large heavy saucepan, melt remaining butter. Add sugar, slivered almonds, water and salt; cook and stir over medium heat until a candy thermometer reads 295° (approaching hard-crack stage). Remove from heat; stir in vanilla., Quickly pour into prepared pan. Let stand at room temperature until cool, about 1 hour., In a microwave, melt 1 cup chocolate chips; spread over toffee. ¼ teaspoon salt
2 cups semisweet chocolate chips
1 cup finely chopped almonds

  • In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.

This is my Mom's recipe for her favorite Christmas candy to make and give as gifts to friends. Everyone always looked forward to receiving and enjoying her Christmas Toffee!!! My mom was a fabulous cook!!!

2 cups real butter
2 tablespoons light corn syrup
2 2/3 cups sugar
6 tablespoons water
8 ounces milk chocolate candy bars, melted (like Hershey bars)
2 1/2 cups sliced almonds, toasted
2/3 cup toasted almond, finely chopped

Steps:

  • Melt butter in a heavy 4 quart saucepan. Add sugar syrup and water.
  • Cook mixture, stirring often to hard crack stage (300F on a candy thermometer and medium golden brown)
  • Watch carefully after syrup reaches 230F - do not over cook - it will scorch! - do not under cook - it will not be brittle. Test in cold water - it will be of brittle texture.
  • Quickly stir in the sliced toasted almonds. Turn out on large ungreased cookie sheet or jelly roll pan.
