My mom's classic Southern deviled eggs are simple to make, deliciously creamy and perfect for holidays, family gatherings and special occasions!

1 dozen large eggs
1 tablespoon yellow mustard
1/4 to 1/3 cup mayonnaise (reduced fat is OK)
3-4 tablespoons sweet pickle cubes, drained (optional, see notes)
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
Sprinkle of paprika, hot sauce or sriracha, chopped fresh parsley, snipped fresh chives, capers, pimientos, sprinkle of cayenne, caviar, cooked, crumbled bacon or an olive slice

Steps:

  • Place eggs in the bottom of a large pot and cover with cold water.
  • Bring water to a boil over high heat. Turn off heat, cover the pan and let the eggs sit for 20 minutes.
  • Drain the eggs and rinse them with cold water. (Alternatively you can do baked hard boiled eggs in the oven or make Instant Pot hard boiled eggs if you prefer.)
  • Peel the cooled eggs then cut in half lengthwise. Scoop out the yellow yolks and place them in a small bowl. Plate egg white halves on serving plate.

1 dozen egg, boiled
1 tablespoon mustard
2 tablespoons white vinegar
3 tablespoons sugar
1/3 cup Miracle Whip

Steps:

  • Hard boil eggs and peel. To make eggs peel easier I peel them while they are still hot under cold running water. Cut eggs in half lengthwise and remove egg yolks.
  • Combined rest of ingredients together. Add eggs to mixture and beat with mixer until smooth.
  • Stuff egg yolk mixture back into egg white halves. Sprinkle with paprika if desired.

Since we had chickens on the farm there were lots of eggs and hence, lots of deviled eggs. This is Grandma'e easy version.

1 dozen eggs
6 Tbsp mayonnaise
1 1/2 Tbsp prepared mustard
salt and pepper to taste
paprika for garnish
OPTIONAL AND MAYBE NOT IN GRANDMA'S RECIPE:
1/4 c sweet pickle relish

Steps:

  • 1. Place eggs in a large saucepan, cover eggs with cold water, and bring to a boil. Cook 2 minutes. Cover pan and remove from stove. Allow to sit at room temperature until water has completely cooled.
  • 2. Peel eggs under cold water and slice in half lengthwise. Carefully remove yolk and place in small mixing bowl. Reserve cooked egg whites. Mash yolks. Add mayonnaise, mustard, salt, and pepper together.
  • 3. Optional: Add pickle relish if using. I love the relish and truly believe Grandma made hers this way. However my sister believes this was not in Grandma's recipe.
  • 4. Spoon yolk mixture into egg white shells and sprinkle with paprika. Chill and serve cold.

  • Place the eggs in a medium saucepan with water to cover and bring to a boil. Remove from the heat, cover the pan, and let stand for 20 minutes. Pour off the hot water and refill the saucepan with cold water. Crack the eggshells all over and let them sit in the cold water for 5 minutes. Peel the eggs, cover and chill for at least 1 hour.
  • Halve the eggs lengthwise. Carefully remove the yolks and transfer them to a small bowl. Mash the yolks with a fork, then stir in the mayonnaise, sweet pickle relish and yellow mustard. I was about 12, when my grandmother (now 96) taught me how to make these. It's simple and easy.

1 dozen large eggs
3 Tbsp miracle whip or mayonaisse
1/4 tsp yellow mustard
paprika

Steps:

  • 1. Buy your eggs about a week in advance of when you'd like to prepare them. Fresh eggs are harder to peel! Put the egg(s) in a pot with cold water that completely covers the egg, plus a little extra water to spare. About an inch or so. Add 1 tsp of salt to water. Bring the water to a boil over high heat. Make sure it is a strong, rolling boil. Let the egg boil for a minute or two. Remove the pot from the heat and cover it with a lid. Let rest for 15 minutes.
  • 2. Put the pan in the sink and run cold water into the pan. Then add about 4 cups of ice. Peeling the eggs under cold water helps make the peeling easier.
  • 3. After the eggs are peeled, slice them top to bottom. Using a spoon, scoop out the yolk and place in a sandwich bag. Add the Mustard and Mayo into the sandwich bag. Close and mash all together. Snip off a corner of the bag and squeeze bag to refill the eggs. Sprinkle with Paprika.
