Time 20m

Yield 3 cups

Number Of Ingredients 10

1/2 onion, diced
1 tablespoon butter
2 pinches kosher salt
8 ears fresh corn
1 sprig fresh rosemary, bruised
1 tablespoon sugar
1/4 teaspoon turmeric
2 tablespoons yellow cornmeal
1 cup heavy cream
Fresh ground black pepper

Steps:

  • In a saucepan over medium heat, sweat the onion in butter and salt until translucent.
  • In a large mixing bowl, place a paper bowl in the middle of the bowl. Resting the cob on the bowl in a vertical position remove only the tops of the kernel with a knife, using long smooth downward strokes and rotating the cob as you go. After the cob has been stripped, use the dull backside of your knife to scrape any remaining pulp and milk off the cob.
  • Add the corn and pulp mixture to the saucepan and cook over medium high until the juice from the corn has tightened. Add the rosemary. Sprinkle the corn with the sugar and turmeric. Stir constantly for about 2 minutes. Sprinkle the cornmeal onto the corn, using a whisk to combine well. Add the heavy cream and cook until the corn has softened, about 2 to 3 minutes. Remove the rosemary. Season with freshly ground black pepper.

GRANDMA'S CREAMED CORNBREAD

Grandma's Creamed Cornbread image

This recipe is from Eric V. Copage's Kwanzaa book. It's hands down THE most delicious cornbread ever. Very moist (almost cake like texture) and sweet - just like I like my cornbread. The original recipe calls for 2 T sugar, but since I like mine sweeter, I use 1/4 c. This is comfort food at its finest (not health food). I usually eat w/ collard greens or cabbage.

Categories     Quick Breads

Time 45m

Yield 1 9 inch round loaf

Number Of Ingredients 10

4 tablespoons unsalted butter, melted
1 cup yellow cornmeal, preferably stone-ground
3/4 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 teaspoon baking powder
1/2 teaspoon salt
1 (8 ounce) can creamed corn
1 cup milk
1 large egg, well beaten

Steps:

  • Preheat the oven to 450°.
  • Pour 2 tablespoons of the melted butter into a 9-inch cake pan, and bake for 5 minutes, until the cake pan is very hot. (I never do this, just spray w/ Pam and add the butter to the batter).
  • Meanwhile, in a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt. Make a well in the center of this mixture, and pour the creamed corn, milk, remaining 2 tablespoons butter, and egg into the well. Stir until smooth. Pour the batter into the hot cake pan.
  • Bake until the cornbread is golden brown and a toothpick inserted in the center comes out clean, 30 to 35 minutes. Remove the cornbread from the oven, and let it stand for 15 minutes before serving.

GRANDMA'S CREAMED CORN

Grandma's creamed corn image

Got this recipe from Grandma today. She was sitting outside on her porch when I called, doing her word puzzles. She said it was 81 degrees today. Gotta love that Florida November weather! I digress...this creamed corn was my VERY favorite treat on Thanksgiving (and still is for that matter), or for any special get togethers....

Time 1h5m

Number Of Ingredients 7

fresh ears of corn
2 Tbsp bacon grease
2 Tbsp margarine or butter
1 Tbsp flour
milk to taste
salt to taste
pinch sugar

Steps:

  • 1. Clean and scrape your ears of corn. Set aside. Add bacon grease and butter/margarine to deep fry pan. Warm pan on medium heat.
  • 2. Add flour and make a thin paste. Make sure paste is not too thick!
  • 3. Add fresh corn to paste. Mix well. Now, add your milk, enough to your liking. Mixture will thicken so be sure to taste and add some if needed. Add salt and sugar. Let simmer on low heat 20-30 minutes. Stir often to avoid burning. Enjoy!

Tips:

  • Use fresh or frozen corn: Fresh corn is the best choice for creamed corn, but frozen corn can also be used. If using frozen corn, be sure to thaw it completely before cooking.
  • Use a good quality cream: The type of cream you use will make a big difference in the flavor of your creamed corn. Use a heavy cream or half and half for a richer flavor.
  • Season to taste: Creamed corn is a versatile dish that can be seasoned to your liking. Add salt, pepper, and other spices as desired.
  • Serve immediately: Creamed corn is best served immediately after it is made. However, it can be stored in the refrigerator for up to 3 days.

Conclusion:

Grandma's Creamed Corn is a classic side dish that is easy to make and always a crowd-pleaser. With its creamy texture and sweet corn flavor, it's a perfect addition to any meal. Whether you're serving it at a holiday dinner or a weeknight meal, this creamed corn is sure to be a hit.
