GRANDMA'S BACON FAT CORNBREAD

Grandma's Bacon Fat Cornbread image

When you cook bacon or chicken, the rendered fat left behind in the pan is loaded with flavor so don't throw it out. Use it to add complexity to dishes like this cornbread. To save fat, let it cool slightly, then strain into an airtight container and refrigerate.

Time 30m

Yield 8 servings

Number Of Ingredients 8

2 cups stone-ground cornmeal
3 tablespoons sugar
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup buttermilk
2 large eggs
6 tablespoons reserved fat, such as rendered bacon or chicken fat (schmaltz)

Steps:

  • Preheat the oven to 375 degrees F. Whisk the cornmeal, sugar, baking powder, salt and baking soda together in a large bowl. Whisk the buttermilk and eggs together in a medium bowl. Fold the wet ingredients into the cornmeal mixture until just combined; set aside.

Pour the melted fat into the cornmeal batter and stir to combine. (Do not wipe out the skillet.) Pour the cornmeal mixture into the hot skillet (batter will sizzle) and bake until the edges are golden brown and the center bounces back when pressed with a finger, 18 to 20 minutes. GRANDMA'S OLD-FASHIONED CORNBREAD RECIPE - (4.2/5)

Grandma's Old-fashioned Cornbread Recipe - (4.2/5) image

Provided by á-22546

Number Of Ingredients 10

2 teaspoons baking powder
1/2 teaspoon soda
1 teaspoon salt
4 tablespoons sugar
3/4 cup cornmeal
1 1/4 cups flour
1 cup buttermilk
2 eggs
4 tablespoons melted butter (mix into batter)
2 tablespoons butter for the iron skillet

Steps:

  • Preheat the over to 400 degrees fahrenheit. Combine powder, soda, salt, sugar, cornmeal and flour in a large bowl. Combine buttermilk and eggs in a bowl. Place your iron skillet in the oven and put the 2 tablespoons butter into the skillet to melt. (You can substitute a 8x8 pyrex but it's not the same) Pour the buttermilk and egg mixture into the flour mixture and mix until just combined. Then add the melted butter. The batter should be lumpy and just a bit on the dry side. Pour this mixture into the hot iron skillet then bake for 20 minutes or until a knife inserted into it comes out just shy of clean. The primary difference in this recipe is the addition of the sugar. It makes a a sweeter recipe. I also increase the cornmeal and decrease the flour because I like my cornbread to be a bit "cornier."

In the time it takes to preheat my oven I had prepared the recipe and ready to bake. Tastes so much better than the box kind. I had to put the recipe here because I keep all my favorite recipes on recipezaar.com.

GREAT-GRANDMOTHER STEINBECK'S JOHNNYCAKE (CORNBREAD)

Great-Grandmother Steinbeck's Johnnycake (Cornbread) image

This recipe is out of my great-grandmother Bertha Iva Steinbeck's recipe box. She really was John Steinbeck's aunt. She lived in Hollister, California, and died in the '30s. I've been making this since I was about 5 years old when my grandmother, Agnes Steinbeck Bowman decided I was old enough to learn to cook. It was actually the second thing I learned to cook...she wanted to see how I handled scrambled eggs before she introduced me to something that demanded some technique! I've never tasted better cornbread in my 47 years.

GRANDMA'S CORNBREAD

Grandma's Cornbread image

My Grandma is the person who taught me the "Love" of cooking...Here is her recipe for Cornbread, the sour cream keeps it moist & flavorful...It goes together well with a pot of Ham 'n Beans or your favorite bowl of soup....

Provided by LeBaker

Categories     Breads

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 10

3/4 cup yellow cornmeal
1 cup unsifted flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 cup sour cream
1/4 cup milk
1 egg, beaten
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 425 degrees.
  • Mix all ingredients enough to blend well, by hand with big blending fork or on low with a hand mixer, enough to blend well.
  • Pour into a greased 8 inch square pan.
  • Bake for 20 minutes.
  • This can easily be doubled & put in a 9 x 13 inch pan.

Tips:

  • Use fresh cornmeal: Fresh cornmeal will give your cornbread a more flavorful and tender texture. If you can't find fresh cornmeal, you can use store-bought cornmeal, but be sure to check the expiration date.
  • Don't overmix the batter: Overmixing the batter will make your cornbread tough. Mix the batter just until the ingredients are combined.
  • Use a well-seasoned cast iron skillet: A well-seasoned cast iron skillet will help your cornbread cook evenly and develop a nice crust.
  • Preheat your oven: Preheat your oven to the temperature specified in the recipe before you start cooking the cornbread. This will help ensure that the cornbread cooks evenly.
  • Let the cornbread cool before serving: Let the cornbread cool for at least 10 minutes before serving. This will help the cornbread set and make it easier to slice.

Conclusion:

Cornbread is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be customized to suit your own taste. Whether you like it sweet or savory, there's a cornbread recipe out there for everyone. So next time you're looking for a quick and easy meal, give cornbread a try!
