Time 30m

Yield 30 serving(s)

Number Of Ingredients 5

1 1/2 cups sugar
1 pint water
1 lb peanuts
1 tablespoon baking soda
1 tablespoon vanilla

Steps:

  • In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, vanilla and water.
  • Stir until sugar is dissolved.
  • Stir in peanuts.
  • Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until hardens when dropped in water.
  • Remove from heat; immediately stir in baking soda.
  • Pour immediately onto cookie sheet.
  • Lift and pull peanut mixture( I do this with 2 forks) into rectangle about 14x12 inches.
  • Let cool.
  • Snap candy into pieces.

Tips:

  • To make peanut brittle, use raw peanuts. Roasting them beforehand will make them too oily.
  • Use a candy thermometer to ensure the sugar syrup reaches the correct temperature. This will prevent the brittle from being too hard or too soft.
  • Spread the brittle out on a greased baking sheet as soon as it is removed from the heat. This will prevent it from sticking together.
  • Let the brittle cool completely before breaking it into pieces. This will help to prevent it from crumbling.
  • Store the brittle in an airtight container at room temperature for up to two weeks.

Conclusion:

With its buttery flavor, crunchy texture, and festive appearance, Christmas brittle is a classic holiday treat that is sure to please everyone. Whether you make it with peanuts, pecans, or almonds, this easy-to-follow recipe will help you create a delicious and memorable treat that will be enjoyed by friends and family alike.
