6 Tablespoons butter, melted
1 Tablespoon sugar
Filling:
½ cup cold heavy whipping cream
½ teaspoon vanilla extract
8 ounces cream cheese, softened
1/2 cup powdered sugar
Zest of one lemon + 2 teaspoons lemon juice
Topping:
¾ pound fresh strawberries, sliced
1 pint raspberries
1 pint blueberries
(optional: add blackberries if you like

Steps:

  • To prepare the Graham Cracker Crust: Mix the graham cracker crumbs together with the butter and the sugar until they are moist. Press into the bottom and up the sides of a tart pan. Place in the fridge for at least one hour.

  • With your mixer and the paddle attachment, cream together cream cheese, powdered sugar, lemon zest and lemon juice until smooth.

cooking spray
1 ½ cups all-purpose flour
¾ cup unsalted butter, at room temperature
⅓ cup confectioners' sugar
¼ teaspoon salt
5 ounces cream cheese, at room temperature
½ cup white sugar
2 large eggs, at room temperature
2 lemons, zested and juiced
2 cups fresh mixed berries
4 sprigs fresh mint, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 9-inch tart pan with cooking spray.

  • Place cream cheese in a large bowl; beat with an electric mixer until smooth, 2 to 3 minutes. Add sugar; mix until combined, 1 to 2 minutes. Add eggs; blend for 1 to 2 minutes. Add lemon zest and juice; mix until incorporated. Pour mixture into cooled tart shell.

Tips:

  • Use fresh, ripe berries: This will ensure that your tart is bursting with flavor. If you can't find fresh berries, you can use frozen berries that have been thawed and drained.
  • Don't overmix the dough: Overmixing will make the dough tough. Mix it just until it comes together.
  • Chill the dough before rolling it out: This will make it easier to work with and less likely to stick to your counter.
  • Use a sharp knife to cut the berries: This will help to prevent them from bruising.
  • Don't overcrowd the tart pan: The berries should be spread out in a single layer.
  • Bake the tart until the crust is golden brown and the berries are bubbling: This will take about 30-35 minutes.
  • Let the tart cool completely before slicing it: This will help to prevent the berries from falling out.

Conclusion:

Grandma's Berry Tart is a delicious and easy-to-make dessert that is perfect for any occasion. With its flaky crust, sweet and tangy berries, and creamy filling, this tart is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this recipe a try.
