1 cup thinly sliced green onion
1 cup shredded reduced-fat sharp cheddar cheese
2 tablespoons butter, melted
1/4 teaspoon pepper
1 (32 ounce) package frozen southern style hash brown potatoes, thawed (cubes)
1 (16 ounce) container nonfat sour cream
1 (10 1/2 ounce) can condensed cream of mushroom soup or 1 (10 1/2 ounce) can chicken soup
cooking spray
1/2 teaspoon paprika

¼ cup butter (melted)
1 cup sour cream
1 cup cream of chicken soup (or cream of cheddar)
¼ cup green onion (chopped)
2 cup cheddar cheese (divided)

Steps:

  • Preheat oven to 375˚F and grease a 9x13 inch baking dish.
  • If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
  • Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
  • Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
  • Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

8 medium potatoes
1/2 lb extra sharp cheddar cheese
1 c milk
1 c whipping cream
1 tsp dry mustard
salt and pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees F. While oven is heating, cook potatoes in their skins in a large pot of boiling water just until cooked through. Peel and grate.
  • 2. Heat milk and cream in a saucepan and gently add cheese until it's thoroughly melted. Add mustard, salt and pepper.
  • 3. Spray a 9x13-inch pan with cooking spray. Add potatoes, and pour cheese sauce over top. Bake covered for about an hour. Toward the last 10 minutes uncover to slightly brown top.
  • 4. Please note, I divided this recipe into two batches, freezing half for later. That's why I used an 8x8-inch pan (the other is in the freezer, and has a bit less than half the recipe in it. FYI)

2 lbs frozen hash brown potatoes, either shredded or cubed
16 ounces sour cream
1/2 cup margarine, melted
1 (8 ounce) can cream of chicken soup
1 medium onion, diced (about a cup)
2 cups sharp cheddar cheese, shredded
1/2 teaspoon salt
1 teaspoon ground pepper
1 cup corn flakes or 1 cup potato chips, crushed

Steps:

  • Spray a 9x12 pan with pan release.
  • Mix all liquid ingredients together in a large bowl.
  • Add potatoes, onions and cheese. It's ok if the potatoes are still frozen. You can use frozen onion too.
  • Scoop into baking pan. Spread evenly.

1 pound medium yellow-flesh potatoes, scrubbed and chopped into 1-inch cubes
1 pound red potatoes, scrubbed and chopped into 1-inch cubes
1 cup shredded mozzarella cheese
½ cup shredded Cheddar cheese
½ cup sour cream
½ cup mayonnaise
4 tablespoons salted butter, cut into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a deep 9x13-inch baking dish with cooking spray.
