Time 1h10m

Yield 8-10 serving(s)

Number Of Ingredients 10

1 1/2 cups all-purpose flour
1/2 cup cornmeal
1 cup sugar
4 tablespoons baking powder
2 teaspoons salt
1 teaspoon crushed red pepper flakes
5 large eggs
1/2 cup melted butter
1 3/4 cups milk
2 (14 ounce) cans creamed corn

Steps:

  • Preheat the oven to 325 degrees F.
  • Mix all the dry ingredients together in a bowl.
  • Mix the eggs, butter, milk and creamed corn.
  • Add the flour mixture to the wet and mix until just combined.
  • Grease a large 9 X 13 rimmed baking dish. Pour the pudding mixture into the pan and place it in the oven. Lightly tent the pan with foil.
  • Bake for 1 hour, until the center is just set. Take the foil off the last 10-15 minutes so the top will be golden.

Tips:

  • Use fresh or frozen corn. Fresh corn is best, but frozen corn will work in a pinch. If using frozen corn, thaw it before using.
  • Don't overcook the corn. Corn pudding should be cooked until the corn is tender but still has a slight bite to it. Overcooked corn will be tough and chewy.
  • Use a variety of cheeses. Cheddar, Parmesan, and Monterey Jack are all good choices for corn pudding. You can also use a combination of cheeses.
  • Add some herbs and spices. Corn pudding is a blank canvas for flavor. Add some herbs and spices to taste, such as salt, pepper, garlic powder, onion powder, or paprika.
  • Top with butter or sour cream. A dollop of butter or sour cream on top of corn pudding is a delicious way to finish the dish.

Conclusion:

Corn pudding is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be customized to your liking. So next time you're looking for a comforting and satisfying meal, give corn pudding a try. You won't be disappointed!
