GRANDMA MANN'S PINEAPPLE UPSIDEDOWN CAKE

Grandma Mann's Pineapple Upsidedown Cake image

This was my husband's Mom's favorite Pineapple Upsidedown Cake. I've been making it for years although I've tweaked it a little. She baked hers in an iron skillet. I bake mine in 9 inch round cake pans. Still really good! Enjoy!

Provided by Donna Mann

Categories     Fruit Desserts

Time 50m

Number Of Ingredients 11

3 Tbsp butter
1/2 c brown sugar
1 egg
1/2 c sugar
1 c flour
1 tsp baking powder
1/4 c evaporated milk
1 Tbsp melted crisco (i use oil)
1 tsp vanilla
8 slice pineapple, drained
1 small jar of maraschino cherries

Steps:

  • 1. Melt the butter in a pan. Add the brown sugar and stir until melted. Pour into iron skillet or baking pan.
  • 2. Beat egg until light. Add sugar and beat well. Mix the flour and baking powder. Alternately, add flour mixture and milk to the egg/sugar mixture. Beat well and add shortening and vanilla.
  • 3. Arrange the pineapple slices over the brown sugar/butter mixture in the pan. Place a cherry in the middle of each slice. Pour batter evenly over the pineapple. Bake in a 350 degree oven for 30 minutes.
  • 4. Immediately turn the cake onto a plate. Spoon any "sauce" that remains in the pan over the cake. Enjoy!

Tips:

  • To ensure the cake doesn't stick to the pan, make sure to grease and flour the bundt pan thoroughly.
  • Use fresh pineapple slices for the best flavor and texture. If using canned pineapple, drain it well and pat it dry before using.
  • Be careful not to overmix the batter, as this can result in a tough cake. Mix just until the ingredients are combined.
  • Bake the cake for the full amount of time specified in the recipe to ensure it is cooked through.
  • Let the cake cool for a few minutes before inverting it onto a serving plate. This will help prevent the cake from breaking.
  • Serve the cake warm or at room temperature with whipped cream, ice cream, or a dollop of Greek yogurt.

Conclusion:

Grandma Mann's Pineapple Upside Down Cake is a classic dessert that is sure to impress your family and friends. With its moist and flavorful cake, caramelized pineapple topping, and sweet glaze, this cake is a delicious treat that is perfect for any occasion. Whether you're serving it for a special occasion or just as a weeknight dessert, this cake is sure to be a hit.
