1 (6-oz.) box raspberry jello
1 cup hot water
1/2 cup cold water
1 large can crushed pineapple
1 apple (peeled & chopped fine)
1/2 cup pecans (chopped fine)

2 box 3oz strawberry jello
2 c hot water
1 can(s) 12oz whole berry cranberry sauce
1 can(s) 20oz crushed pineapple
1 c seedless red grapes cut in half
1/2 c chopped walnuts

1 (12 ounce) package frozen cranberries
1 (8 ounce) can crushed pineapple, drained
1 cup chopped pecans
1 (10 ounce) package miniature marshmallows
1 cup sugar
1 pint heavy whipping cream

Steps:

  • Put cranberries in a food processor and blend until well chopped. Transfer cranberries to a large bowl, and mix in pineapple, pecans, marshmallows and sugar.
  • In a medium bowl, beat cream with an electric mixer until stiff peaks form. Fold whipped cream into cranberry mixture. Chill until ready to serve. (Or, freeze for 2 hours before serving.)

I always love the punch of color that cranberries add to a meal, and this delicious cranberry salad recipe really does the berry justice. Not only did we love the perfect balance of sweet and tart, but the chopped pecans added a wonderful crunch that we'd never had before in a cranberry salad.

1 small package of cherry Jell-O (3oz box)
1 c hot water
1 c sugar
1 Tbsp lemon juice
1 c drained crushed pineapple (8oz can) (juice reserved)
1 c pineapple juice (use the reserved juice and add water to make 1 cup)
1 c ground cranberries
1 orange (ground)
1/2 c pecans, chopped

Steps:

  • 1. Boil the cup of water. Dissolve the Jell-o in the hot water in an 8-inch square pan mix well. Add the sugar, lemon juice, and pineapple juice. Stir to dissolve well. Note: You can substitute the 8x8 dish and use a 9x13 dish, it seems to gel up a bit better that way.
  • 2. Add the remaining ingredients and mix. Chill overnight.
  • 3. Grandma's Notes: Chop up the pecans first before getting the blender wet. Or you could just buy pre-chopped pecans and save a step. Use the blender or food processor to chop up cranberries, then orange, seeded, and partially peeled. The chopped peel gives it that special zing!

1 pkg 12 oz fresh cranberries
1 peeled apple
1 peeled orange
2 c white sugar
1 pkg 3 oz cherry jello
1/2 c pecans or walnuts broken into small pieces
1 c crushed pineapple with juice
1 c boiling water

Steps:

  • 1. first u wash your cranberries. then peel your apple and orange. measure out your sugar.
  • 2. use a food processor to grind up your cranberries. then grind up your apple and orange. this will make them smooth. i do my cranberries then put them into a empty clean bowl before i grind my apple and orange because the cranberries make the processor full.
  • 3. then boil your 1 cup of water and dissolve your jello in the one cup of water. next add your sugar and stir it until its all dizzolved. tip add your sugar slow until its mixed well. then add your cranberries, apple, orange,and nuts. put in a covered bowl and refridgerate for 2 days before serving it will thickin up. just stir and serve. go really good with ham or turkey we make it every year for the holidays.

- Use fresh cranberries for the best flavor. Frozen cranberries can be used, but they will not be as tart. - If you don't have a food processor, you can chop the cranberries by hand. Just be sure to chop them finely so that they blend well with the other ingredients. - Add the sugar to taste.
