Cinnamon Twists
1 tablespoon ground cinnamon
1 tablespoon sesame seeds
1/2 teaspoon ground cardamom
2 tablespoons light brown sugar
1 (9 by 10-inch) sheet frozen puff pastry, thawed and cut into 20 (1 by 4-inch) pieces
1 egg, beaten
1/2 cup honey
1/4 cup lemon juice
1/3 cup powdered sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom

Steps:

  • For the cinnamon twists:
  • Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Set aside.
  • In a shallow bowl, mix together the cinnamon, sesame seeds, cardamom, and brown sugar. Twist 2 pieces of dough together to form a rope-shape. Pinch the ends together to seal. Brush the dough with the beaten egg and roll gently in the cinnamon mixture until coated. Place on the prepared baking sheet. Repeat with the remaining dough. Bake for 12 to 14 minutes until puffed and golden. Cool on a wire rack.
  • For the sauce:

This is a a breakfast treat, it takes a little time, but worth the wate. You could always make it your own by changing the honey topping to cinnamon , raisins, sugar topping. In my Grandma's time honey twist was a unexpected treat.

1 c milk scaled
1/4 c shortening
1/2 c sugar
1 tsp salt
2 cakes of yeast
1/4 c lukewarm water
2 eggs beaten
5-6 c sifted flour
HONEY TOPPING
1/4 c butter
2/3 c confectioners sugar
1 egg white
2 Tbsp warm honey

Steps:

  • 1. Crumble yeast in a bowl with lukewarm water to soften.
  • 2. Pour scalded milk over shortening, sugar,and salt. Cool milk mixture to luckwarm , add yeast and eggs. Beat in flour to make a soft dough.
  • 3. Turn out onto a floured board and knead until smooth. Place in a large greased bowl cover, and let stand to rise until double in size.
  • 4. When light shape into a long roll about 1 " in diameter. Coil the roll into a greased cake pan begining at the outside edge and working into the center to cover the pan.
  • 5. Brush with honey topping and let stand to rise until doubled in size. Bake at 375 degrees for 25-30 minutes. It makes one large twist

This was one of my Grandmas soups that was made in the 40's . The soup was easy to make but you had to make a stock before that to go with the soups and it took a long time to make about 5-6 hours. Now days we just use bought beef stock and use it in place of making your own.

2 cup(s) ( brown stock ) recipe follows
1 quart(s) water
4 cup(s) green peas
1/4 cup(s) diced celery
1 - onion diced
1 - turnip diced
2 - sprigs of mint
1 tablespoon(s) flour
1 teaspoon(s) salt
1/8 teaspoon(s) pepper
1/2 teaspoon(s) sugar
( BROWN STOCK )
5 pound(s) beef bone
3 quart(s) water
8-10 - peppercorns
5 - cloves
1 - bay leave
2 - sprigs parsley
3 - sprigs thyme
1 tablespoon(s) salt
1 - stalk celery chopped
1/2 cup(s) diced carrots
2 - large onions sliced
1/2 cup(s) diced turnips

Steps:

  • ( BROWN STOCK ) Cut or trim meat from bones and brown meat. Put the meat and bones into a large kettle, or pot, cover with water and seasoning and bring to a boil, reduce heat and simmer 4-5 hours. Add the vegetables and cook 1-2 hours longer. Strain and cool. When cool remove the layer of fat at the top. Use the broth fot soups, stews, and gravys.
  • Green Pea Soup.. combine brown stock, warer and 3 1/2 cups peas, celery, onions, turnips and mint. Cook until vegetables are tender.
  • Rub through a sieve, thin with stock or water if necessary.
  • Blend flour and seasoning with salt, pepper, and sugar. Add to puried vegetables and heat to boiling, stirring constantly. Add remaining whole peas, cook until tender, and serve.

This is another of my Grandmas's recipes. Home made bread was a must in the 40's, we lived on a farm and only went to town once a month.

1 - yeast, cake
1/2 cup(s) lukewarm water
2 tablespoon(s) shorteing
2 tablespoon(s) sugar
2 teaspoon(s) salt
1/2 cup(s) milk ( scalded )
2 - egg yolks
3 1/2 to 4 cup(s) sifted flour

Steps:

  • Soften yeast in lukewarm water,
  • Add shortening, sugar, and salt to milk. Cool milk to luckwarm and add yeast and beaten egg.
  • Stir in flour to make a soft dough, turn out onto a floured board and knead until smooth ( about 8-10 minutes )
  • Shape into rolls. Let stand until double in size bake at 425 for 12-15 minutes.

2 tablespoon(s) corn syrup, light
3 ounce(s) chocolate ( squares )
1/2 cup(s) milk
2 tablespoon(s) butter

Steps:

  • Cook sugar, and corn syrup and chocolate squares and milk on low to midume heat (232 degrees ) or until a small amount of syrup forms a very soft ball when dropped into cold water.
  • Remove from heat, add vanilla and butter. Cool to lukewarm without stirring.
  • Beat until creamy and thick enough to spread. This will cover two ( 8" ) layers top and sides.

2 eggs
2 1/4 cups flour
1 teaspoon almond extract (your choice) or 1 teaspoon vanilla extract (your choice)
1/2 cup honey
1/2 cup sugar
1/2 cup nuts (optional)
1/2 teaspoon baking soda

Steps:

  • Cream shortening, sugar, and eggs.
  • Add honey and extract, mix well.
  • Add baking soda and one third of the flour.
  • Mix well then add another third of flour and mix well.
  • Add last third of flour and mix well.
  • Add the nuts and mix.
  • Grease cookie sheet and bake for 8-10 minutes in a preheated 350 degree oven.

This is one of my Grandmothers recipes that can be changed to a lemon, or pineapple, or orange frosting by just a few simple changes.

1/2 cup(s) butter at room temp.
3 cup(s) confectioners' sugar
4 tablespoon(s) cream or evaropated milk
1 teaspoon(s) vanilla extract

Steps:

  • Soften butter to room temp, and cream in remaining ingredients and continue creaming until mixture is well blended and fluffey.
  • This will cover the top and sides of two ( 8" ) layer cakes.
  • For LEMON FROSTING : add 1/2 teaspoon graded lemon rind and use lemon juice instead of vanilla.
  • For PINEALLLE FROSTING : use 1/3 cup crushed pineapple with juice instead of cream.
  • For ORANGR FROSTING : add 1 tablespoon grated orange rind and use orange juice instead of cream.

This is a filling for a three layer cake. In grandmas time she had to use what was at hand, so fruit came off the farm, it was cooked and canned, and used as needed.

2 cup(s) apricots peeled and seeded cut into halfs
1-2 cup(s) water
2/3 cup(s) sugar
1 tablespoon(s) lemon juice
1/2 teaspoon(s) greded lemon rind

Steps:

  • Peel and seed the apricots and cook in just enough water to cover until tender and practically dry. Beat apricots until smooth.
  • Add sugar, lemon juice and grated lemon rind and cook until sugar has entirely dissolved. Let cool this will make enough filling for a 3-layer cake.
