4 extra-large egg yolks
1/2 cup sugar, plus 1 tablespoon for each serving
3 cups heavy cream

Steps:

  • Preheat the oven to 300 degrees F.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the egg, egg yolks, and 1/2 cup of the sugar together on low speed until just combined.   • Preheat oven to 350 degrees F and bring bread mixture to room temperature. Bake uncovered, in middle of oven until puffed and edges are pale golden, 35 to 40 minutes.

2 cups heavy cream
4 egg yolks (from large eggs)
3 ounces sugar
1 1/2 ounces Grand Marnier
1 tablespoon vanilla (use good quality)

Steps:

  • Combine egg yolks with sugar, Grand Marnier and vanilla.
  • Heat cream to boiling. Temper egg mixture with cream - add slowly, stirring constantly. Do not create foam. Use a wooden spoon.
  • Pour into individual ramekins.
  • Put a towel in the bottom of a roasting pan. Place the ramekins on the towels and then add hot water about half way up the sides of the ramekins.
  • Loosely cover pan with foil.

5 eggs

Steps:
