1 lb ground beef (90% lean)
1/2 onion (finely diced)
2 garlic cloves (minced)
1/3 cup panko bread crumbs
1 large egg
1 ½ tsp Worcestershire sauce
2 tsp mayonnaise
1 tsp sea salt
½ tsp black pepper
1 ½ tsp Italian seasoning
1 Tbsp ketchup
1 ½ tsp milk ((whole milk or any kind))
2 tsp Dijon mustard
1 Tbsp olive oil (to sautee)
1/2 yellow onion (finely diced)
1 Tbsp unsalted butter
8 oz brown mushrooms (sliced)
2 garlic cloves (minced)
2 Tbsp all-purpose flour
1 1/2 cup beef broth (+ 1/2 cup water)
½ tsp Worcestershire sauce
½ tsp Dijon mustard
2 tsp ketchup
¼ tsp sea salt
⅛ tsp ground black pepper

Steps:

  • In a bowl combine all of the ingredients for the beef patties (except the oil). Mix until well incorporated and shape into 4 oval or round patties flattening the center for even thickness throughout.
  • Heat 1 Tbsp oil in a non-stick pan, once hot, add patties to the skillet and cook until patties are golden brown on both sides and fully cooked. Remove the patties from the skillet and cover to keep warm.
  • Sauté ½ onion (you can also slice onion into thin slices, whatever your personal preference is) in the same skillet. Once the onion starts to become tender, add the garlic and butter and mix.
  • Add the mushrooms and sauté until browned, mixing frequently. Lightly season with salt and pepper.
  • In a bowl, whisk together all of the remaining gravy ingredients: 2 Tbsp flour, 1 1/2 cups broth, 1/2 cup water, 1/2 tsp Worcestershire, 1/2 tsp dijon, 2 tsp ketchup, 1/4 tsp salt, and 1/8 tsp pepper. Pour into the mushrooms and cook until the gravy thickens.
  • Add the patties back to the pan and completely cover with the gravy and mushrooms and cook just until patties are heated through.

1 1/2 pounds lean ground beef
1/2 cup seasoned breadcrumbs
1 tablespoon ketchup
2 teaspoons dry mustard
4 dashes Worcestershire sauce
1 cube beef bouillon, crumbled (or powdered beef base)
Salt and pepper
1 tablespoon butter
1 tablespoon olive oil
1 whole onion, halved and thinly sliced (or diced if you prefer)
2 cups beef broth, more if needed for thinning
1 tablespoon ketchup
1 teaspoon seasoning sauce, such as Kitchen Bouquet, optional
4 dashes Worcestershire
1 teaspoon cornstarch, optional
Salt and pepper

Steps:

  • For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.
  • Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
  • For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
  • Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.

1 pound of Ground Round Beef
1/2 teaspoon of Black Pepper
1 teaspoon of Salt
1/2 teaspoon of Garlic Powder
1 teaspoon of Worcestershire Sauce
1 whole Egg
1/4 cup of dry Bread Crumbs
2 Tablespoons of Butter
1 large Onion, sliced
2 Tablespoons of Flour
2 cups of Water
2 teaspoons of Beef Bouillon Granules

Steps:

  • In a mixing bowl, combine the Beef, Black Pepper, Salt, Garlic Powder, Worcestershire Sauce, Bread Crumbs and one whole Egg. Stir mixture together well.
  • Shape into 4 equal sized patties.
  • Heat a skillet over medium heat for about a minute, and then add Butter.
  • Place meat patties in skillet and brown on both sides for about 4-5 minutes each. Remove from skillet and set aside.
  • Add the sliced Onion into the skillet, right on top of the browned bits.
  • Reduce the heat and cook the onions on medium-low heat until the onions turn translucent and brown. Don't rush this step. Cook the onions low and slow for about 20-25 minutes.
  • Sprinkle 2 Tablespoons of flour over the onions. Stir. Let cook and brown for about 2 minutes.
  • Add 2 cups of warm Water. Stir well. Raise the heat back up to about medium.
  • Add 2 teaspoons of Beef Bouillon Granules. Stir Well.
  • Place the meat patties back in the pan. Cover. Reduce heat just a little and let simmer for about 15 more minutes. Remove from heat and serve warm.

3 tablespoons crushed butter-flavored crackers
1 tablespoon finely chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper

3/4 pound ground beef
1 can (4 ounces) mushroom stems and pieces, drained
2 tablespoons butter
3 tablespoons all-purpose flour
1-3/4 cups water
2 beef bouillon cubes
1/4 teaspoon browning sauce, optional
Hot mashed potatoes

Steps:

  • In a medium bowl, combine egg, cracker crumbs, onion, salt, pepper and sage. Add beef and mix well. Shape into two patties. , In a medium skillet, cook patties for 4-5 minutes per side or until browned; drain. This meal is so much more than what it seems, and makes a lovely family dinner. I made some changes to the original recipe, added some flavors that we like and, voila, it was a big hit. I doubled the gravy so we could have it over the egg noodles that were on the side. That was a good idea, because it was delicious.

1/3 c french onion soup
1/3 c cream of mushroom or golden mushroom soup
1 1/2 lb ground beef
1/2 c dry breadcrumbs
1 egg
1/4 tsp salt
1/8 tsp black pepper (to taste)
GRAVY:
1 Tbsp flour
remainder of both soups
1/2 c ketchup
1 Tbsp worcestershire sauce
1 tsp dry mustard
1/2 c water
1/4-1/2 c sliced mushrooms (optional)

Steps:

  • 1. In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper. Shape into 6 oval patties.

EVOO for liberal drizzling
2 tablespoons butter
2 large onions, sliced
Salt and coarse black pepper
Ground thyme
1 bay leaf
2 pieces stale white bread, crust trimmed
Milk or half-n-half
About 1 2/3 pounds ground sirloin
1 large egg, beaten
1/4 cup Worcestershire sauce
3 tablespoons grated onion
2 tablespoons flour
1/2 cup dry white wine
1 cup beef stock
Watercress, for garnish, optional

Steps:

  • Place a drizzle of EVOO in a skillet over medium heat and melt the butter into the oil. Add the onions, season with salt and pepper, a little ground thyme and add the bay. Caramelize the onions until very soft and sweet and light golden in color, 20 to 25 minutes.
  • Meanwhile, soak the bread in milk or half-n-half. Place the meat in a bowl and add the egg. Squeeze out the bread and crumble into crumbs as you add to the bowl. Add the Worcestershire and grated onion to the beef. Sprinkle with salt and pepper and combine. Form into 4 (1-inch thick) oval loaves. Heat a drizzle of EVOO in a large skillet over medium-high heat. Add the loaves and cook until cooked through, about 15 minutes, turning occasionally. Transfer the meat to a plate.
  • Sprinkle the flour over the caramelized onions, stir 1 minute. Deglaze the pan you cooked the meat in with the wine and pour into the onions. Add the beef stock and thicken a moment. Serve the gravy over the Salisbury steaks. Garnish with a little watercress, if desired.

2 teaspoons dry mustard
4 dashes Worcestershire sauce
2 tablespoons ketchup
One 1-ounce packet French onion soup mix
Kosher salt and freshly ground black pepper
1 tablespoon salted butter
1 tablespoon olive oil
1 tablespoon all-purpose flour
1/4 cup sherry
1 1/2 cups low-sodium beef broth
Fresh parsley leaves, for garnish

Steps:

  • Place the ground beef, breadcrumbs, dry mustard, Worcestershire sauce, 1 tablespoon of the ketchup, 1 tablespoon of the soup mix and some salt and pepper in a bowl and knead until well combined. Form into 4 oval patties, and using the side of your hand, make lines across the patties to give them a "steak" appearance.
  • Place a skillet over medium-high heat and add the butter and oil. When the butter has melted and the oil is hot, fry the patties on both sides until no longer pink in the middle, about 5 minutes per side. Remove from the skillet and pour off all but 2 tablespoons of the grease.
  • Sprinkle over the flour and let cook for a minute. Remove the skillet from the heat and deglaze with the sherry, scraping the skillet to release all the flavor. Return to the heat and add the beef broth, remaining 1 tablespoon ketchup and remaining soup mix. Bring to a boil and let thicken, 2 to 3 minutes. Taste and adjust the seasoning as needed.
  • Remove the skillet from the heat and return the patties to the gravy, spooning a little gravy over each. Garnish with the parsley.
