Yield one 9-inch pie (8 servings)

Number Of Ingredients 8

1 lemon, halved
1 lime, halved
1 orange, halved
4 large egg yolks
One 14-ounce can sweetened condensed milk
One 9-inch prepared graham cracker crust
1 cup heavy cream
1 tablespoon confectioners' sugar

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F.
  • Prepare a grill for medium heat. Grill the lemon, lime and orange cut-sides down until charred and soft, about 5 minutes. Cool slightly, then zest some of the fruit to get 1 tablespoon of zest; set aside. Juice all of the citrus (you should have 1/2 cup citrus juice).
  • Whisk the egg yolks in a medium bowl until smooth. Add the sweetened condensed milk and the citrus juice. Stir until smooth, then pour into the prepared crust. Bake until the center of the pie is just set, 20 to 25 minutes. Let cool for 1 hour, then refrigerate for another hour until chilled. Chill a large bowl.
  • Put the heavy cream in the chilled bowl and add the confectioners' sugar and the grilled zest. Whip until soft peaks form. Top the cooled pie with the whipped cream and serve immediately or chill again briefly before serving.

Time 10m

Yield 1 Pie, 8 serving(s)

Number Of Ingredients 6

1 (14 ounce) can sweetened condensed milk
1 tablespoon lemon juice
6 ounces frozen lemonade concentrate
1 teaspoon vanilla
1 (8 ounce) container whipped topping
6 ounces small pre -made graham cracker pie crust

Steps:

  • Mix all ingredients except for whipped topping.
  • Fold ingredients into the whipped topping.
  • Pour into pie crust.
  • Refrigerate until chilled.

Tips:

  • Use fresh lemons for the best flavor. Bottled lemon juice can be substituted, but it will not have the same brightness of flavor.
  • Grate the lemon zest finely. This will help to release the essential oils and give the pie a more intense lemon flavor.
  • Be sure to cream the butter and sugar together until light and fluffy. This will help to incorporate air into the mixture and make the pie light and airy.
  • Add the eggs one at a time, beating well after each addition. This will help to prevent the eggs from curdling and help to keep the pie smooth.
  • Pour the pie filling into a pre-baked pie crust. This will help to prevent the crust from becoming soggy.
  • Bake the pie until the filling is set and the crust is golden brown. This will usually take about 45-50 minutes.
  • Let the pie cool completely before serving. This will help the filling to firm up and make it easier to slice.

Conclusion:

This classic lemon pie is a delicious and refreshing dessert that is perfect for any occasion. It is easy to make and can be tailored to your own taste. For a sweeter pie, add more sugar to the filling. For a more tart pie, use more lemon juice. You can also add other flavors to the pie, such as fresh berries or a dollop of whipped cream. No matter how you choose to make it, this lemon pie is sure to be a hit!
