2 tablespoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground cardamom (optional, but delicious)
3 large Honeycrisp apples, peeled, halved vertically and cored
4 tablespoons salted butter, melted
2 tablespoons brown sugar
1 orange, zested and juiced (about 3 tablespoons juice and 2 teaspoons zest)
1/2 cup quick-cooking oats
1/4 cup slivered or sliced almonds
Pinch kosher salt
Honey, for serving
Vanilla ice cream, for serving

Steps:

  • For the apple pie spice: Mix together the cinnamon, nutmeg, allspice and cardamom if using in a small bowl.
  • For the apples: Preheat the oven to 400 degrees F.
  • Place the apple halves core-side down on a flat surface. Before slicing, place chopsticks or wooden spoons on either side of them to make sure you don't cut all the way through. Slice almost all the way to the bottom of each apple half at 1/4-inch intervals, then place them on a sheet pan.
  • Mix 1 tablespoon of the butter, 1 tablespoon of the brown sugar, 2 teaspoons of the apple pie spice and the orange juice in a pitcher. Drizzle over the apples, making sure they are well coated and the drizzle goes into the slits. Bake until they are just starting to get tender, about 15 minutes.
  • Meanwhile, mix together the oats, almonds, salt, remaining melted butter, remaining brown sugar, orange zest and remaining apple pie spice. Sprinkle the oat mixture over the apples, making sure to get some between the slices without breaking the apples. Bake until the topping is slightly crisp and golden, another 10 minutes. Drizzle with honey and serve with ice cream.

I guess Apple Pie has always been one of my most favorite pies! I can still remember my mom, in her little kitchen, peeling the apples and rolling out her delicious, flaky crust. She never had a recipe written down, but I think I got it right...this one tastes just like hers.

crust for 2 9" pies (use for top and bottom)
1 c sugar
1/3 c flour
1 tsp nutmeg
2 tsp cinnamon
dash of salt
8 c thinly sliced, pared apples (my family loves mcintosh)
3 Tbsp butter

Steps:

  • 1. Heat oven to 425'F. Stir together sugar, flour, nutmeg, cinnamon and salt; mix with the apples until all are coated.
  • 2. Turn into pastry-lined pie pan; dot with butter. Cover with top crust, which has slits cut into it, or use a fork to make holes in the top. (This allows steam to escape.) Seal the edges and using your fingers, make a flute all around. Place onto a baking tray, to catch any spills.
  • 3. Cover edge with 2-3" strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking.
  • 4. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft. Bake 40-50 minutes or until crust is brown and juice begins to bubble through slits in crust. If the top starts to get too browned, cover it with foil too

6 medium-sized baking apples (I used Granny Smith)
1 tablespoon granulated sugar
1 tablespoon ground cinnamon
1 stick unsalted butter
1 cup granulated sugar
1 cup all-purpose flour
1 large egg

Steps:

  • Preheat the oven to 350°F. Peel and core the apples. Cut them into 4ths and thinly slice. Place the apple slices into a large bowl.
  • Toss the apples in the sugar and cinnamon.
  • Grease a 9-inch pie dish with the stick of butter from the crust ingredients.
  • Place the apples into the pie dish evenly.
  • Place the remaining butter into a large microwave-safe bowl. Microwave in 15-second intervals until the butter is melted. Add the sugar and flour, stir to combine.
  • Add the egg and mix it in well.
  • Pour the topping on top of the apples and smooth it out.
  • Bake for 50-60 minutes until the crust is golden brown and the apples are cooked through and bubbly.

6 tart apples, cored, peeled and cut into chunks
1 tablespoon butter
4 cups flour
2 teaspoons salt
1 1/2 cups shortening
About 1/4 cup cold water

Steps:

  • For the filling: mix the sugar, flour, cinnamon, and nutmeg with apples and set aside.
  • Preheat the oven to 375 degrees F.

  • Roll out bottom crust into pie dish.

Your own crust in a deep-dish pan. I use frozen crust, thawed
About 2 1/2 lb. apples--see intro
2/3 cup sugar
1 1/2 tablespoons cornstarch
3/4 teaspoon cinnamon
1/4 teaspoon allspice (or the same amount of combination nutmeg & cloves)
1/8 teaspoon salt
1 tablespoon fresh lemon juice
1 1/2 tablespoons butter or margarine

Steps:

  • Peel & core the apples & cut in half. Arrange most of them around the sides of the crust and in the middle--you'll have at least one left. They can stick up beyond the crust a little (they'll cook down), but not much. You might have to slice off the bottoms and use them to fill in. Sprinkle with the lemon juice. Combime all dry ingredients and pour about 1/3 of them over & around the apples. Cut the remaining apple into slices and fit the slices in between the halves so that you completely cover the crust and the pie is full of apples. I make some little pieces & stick them under the halves, in the core space. Pour the rest of the dry ingredients over & around the apples. Dot all apples with butter or margarine. Put on cookie sheet and bake in pre-heated 425 degree oven for 20 minutes. Turn oven down to 375 degrees, and baste the tops of the apples with the liquid in between them. Bake 20 more minutes at 375, baste again, and bake 20 more minutes. Check that apples are done (soft, not crunchy). Total baking time is an hour or a little more. When apples are done, take the pie out and immediately baste again. Top should look shiny. Cool.

2-1/4 cups sugar
1/3 cup all-purpose flour
7 medium tart apples, peeled and sliced (about 8 cups)
3 cups fresh or frozen cranberries
2 teaspoons grated orange zest
1-1/2 teaspoons ground nutmeg
1-1/2 teaspoons ground cinnamon
6 cups frozen or fresh raspberries
Optional: Egg wash, additional sugar or coarse sugar, and whipped cream

Steps:

  • Divide dough into 2 portions so that 1 is slightly larger than the other; wrap and refrigerate 1 hour or overnight., Roll out larger portion of dough between 2 pieces of waxed paper into a 18x13-in. rectangle. Remove top sheet of waxed paper; place a 15x10x1-in. baking pan upside down over crust. Lifting with waxed paper, carefully invert crust into pan. Remove waxed paper; press crust onto bottom and up sides of pan. Allow to chill while preparing filling. , In a Dutch oven, mix sugar and flour; stir in apples, cranberries, orange zest and spices. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, 10-12 minutes or until apples are tender and juices are thickened, stirring occasionally. Remove from heat; stir in raspberries. Set aside to cool completely. , Preheat oven to 375°. Add filling to prepared crust., On a well-floured surface, roll remaining dough into a 1/8-in.-thick rectangle; cut into 1-1/2-in.-wide strips. Arrange strips over filling, sealing ends to bottom crust. If desired, brush crust with egg wash; sprinkle with additional sugar or coarse sugar., Bake on lowest oven rack 45-50 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack. If desired, serve with whipped cream.
