12 ounces cranberries
1/4 cup sliced green onions
2 jalapeños (minced)
1/4 cup fresh cilantro leaves (minced)
2 tablespoons finely grated fresh ginger
2 tablespoons lemon juice
1/2 cup granulated sugar

Steps:

  • Rinse, drain, and pick over cranberries, (discarding all that are soft or bruised). Place cranberries in a food processor or blender; pulse until finely chopped but not mushy.
  • Place crushed cranberries in a bowl; mix together with green onions, jalapeños, cilantro leaves, and ginger. Pour lemon juice and sugar over and stir together.
  • Cover with plastic wrap and refrigerate and allow flavors to develop. It will be a bit tart to begin with, but as it is allowed to sit it will develop even more flavor.
  • Can be served as a plain salsa, but is amazing served over cream cheese with crackers.

This Cranberry Salsa with cream cheese is a spicy and sweet combo that is always a hit at parties.

12 ounces fresh cranberries
3/4 cup granulated sugar ((add more to taste))
1 jalapeno (, seeded and chopped coarsely (leave the seeds in if you like it spicy))
1/2 cup cilantro
4 green onions
2 tablespoons lime juice
pinch of salt
2 8 ounce blocks of cream cheese

Steps:

  • Place all of the ingredients in a food processor (EXCEPT CREAM CHEESE) and pulse until desired consistency. I like mine fairly fine. Chill in the fridge for a couple of hours (preferably overnight) to allow the salsa to macerate. Serve over cream cheese and with crackers.
  • This makes enough to cover two blocks of cream cheese. Some people prefer to spread the cream cheese on a serving dish with the salsa on top. I prefer to just pour it on top of a block of cream cheese.
  • Depending on how tart your cranberries are you may want to add more sugar. This last batch I added a total of 1 cup of sugar.

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste. Chop 1 cup raw cranberries in a food processor and add to cranberry sauce. Stir in 1 thinly sliced jalapeno, 1 tablespoon lime juice and 1 teaspoon each honey and salt. Let cool to room temperature. Just before serving, add 2 tablespoons chopped cilantro.

1 large box of jello (raspberry or strawberry)
1 c nuts, chopped (gram mostly used walnuts)
1 c celery, sliced
1 c drained & crushed pineapple
3 c water
