For years I have been looking for a good baked Hush Puppy recipe to satisfy the craving for them in a healthier way and I have finally found it! I made these and they were a definate hit! I made them using mini-muffin tins to make them more crusty, just like a regular hush puppy, and I got 18 mini muffins out of it. Hope you like them as much as we did!

Number Of Ingredients 10

2/3 cup yellow cornmeal or 2/3 cup white cornmeal
1/3 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 large egg whites
3/4 cup onion, minced
1/3 cup milk
2 teaspoons dried parsley
1 tablespoon vegetable oil
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 450 degrees. Grease a 12 cup muffin pan or you can use a mini muffin pan.
  • Combine cornmeal, flour, baking powder and salt in a large bowl.
  • In a separate bowl, combine egg whites, onion, milk, parsley, oil and pepper.
  • Add to dry ingredients stirring just until moistened.
  • Spoon into prepared muffin tins.
  • Bake for 10-12 minutes or until lightly browned. Remove and cool on a rack for 5 minutes. Serve immediatlely.

3 cups cornmeal
1 cup self-rising flour
1/2 cup sugar
2 tablespoons dried onions
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3/4 to 1 cup hot water
Oil, for frying

Steps:

  • Combine the cornmeal, flour, sugar, dried onions, baking powder, salt and pepper in a large bowl and mix. Next, add the hot water slowly until the mixture begins to thicken. The batter should be thick and start to rise quickly. Continue to mix and knead until the batter stops rising. Once the batter is thick enough, let it stand for 30 minutes before cooking.
  • When ready to cook, add enough oil to a frying pan for the hushpuppies to be submerged. Heat over high heat to 350 degrees F. Use a spoon to carefully drop the batter into the oil. Make sure to spread them apart so they do not stick together. Fry until golden brown on all sides. (The hushpuppies will rise to the top of the oil, so make sure to turn them in the oil on all sides so they cook evenly.) Repeat with the remaining batter.

1 cup all-purpose flour
3 teaspoons baking powder
1 teaspoon salt

1/4 teaspoon cayenne pepper
1/2 cup onion, finely diced
2 eggs, beaten
2/3 cup milk
4 tablespoons canola oil

Steps:

  • Preheat oven to 425 degrees.
  • Spray cups of mini muffin pans with nonstick vegetable spray.
  • Blend cornmeal, flour,baking powder, salt, sugar and red pepper in medium bowl.
  • Stir in onion.
  • Beat eggs, milk and oil in small bowl.
  • Add to cornmeal mixture and stir just until blended.

My Mom owned a small restaurant, and her Hush Puppies were so good customers would order an extra serving! I tweaked the ingredients to make these without frying, to save on calories.

1 c martha white buttermilk cornbread mix
1 large egg
2/3 c milk
1/4 c oil
1/2 tsp baking powder
1/2 tsp baking soda
1/3 c diced fresh onion
1/3 c diced fresh bell pepper

Steps:

  • 1. Preheat oven to 400°F Spray a 12 count miniature muffin tin with cooking spray.
  • 2. Using a whisk, blend egg, milk, and oil together in small bowl. Add cornbread mix, baking powder, and baking soda. Continue to whisk while adding onion and bell pepper. Pour or spoon into mini muffin tins sprayed with cooking spray.
