1 1/2 cups flour
1 1/2 tablespoons baking powder
1 teaspoon salt
1 1/4 cups milk
3 tablespoons butter (melted)
1 egg

Steps:

  • Preheat griddle to medium heat.
  • Mix together all dry ingredients.
  • Add the rest of the ingredients.
  • Stir until well mixed, but do not over mix as this will toughen the pancakes.
  • The batter will be slightly lumpy.
  • Spray non fat cooking spray on to preheated griddle.
  • Pour 1/4 cup of batter onto griddle.
  • Cook for 2 minutes on one side.
  • Flip pancake over and cook for 1 more minute.

I adapted this recipe from 'The Best Recipe Cookbook'. I usually don't have buttermilk in the house so I substitue 1 cup clabbered milk (1 Tbsp. white vinegar plus enough milk to make one cup, let stand 5 minutes before using) or 1 small container yogurt plus enough milk to make 1 cup wet ingredients. If using yogurt you'll probably need to add 1-2 Tbsp. extra milk because the batter will be thicker.

1 cup all-purpose flour
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup buttermilk
1/4 cup milk (plus a Tbs. or so extra if batter is too thick)
1 large egg, separated
1 tablespoon unsalted butter, melted

Steps:

  • Whisk dry ingredients in medium bowl. Pour buttermilk and milk into a 2 cup Pyrex measuring cup. Whisk egg white into milk mixture. Mix egg yolk with melted butter, and then stir into milk mixture. Dump wet ingredients into dry ingredients all at once; whisk until just mixed.
  • Meanwhile, heat griddle or a large skillet over medium-high heat coated with cooking spray. Pour batter, about ¼ cup at a time, onto griddle, making sure not to overcrowd. When pancake bottoms are brown and top surface starts to bubble, 2 to 3 minutes, flip cakes and cook until remaining side has browned, 1 to 2 minutes longer.

This has been in the family for a while, don't know were it came from, was just passed around and around for 50yrs or more..lol.. i have tried a lot of other recipes but this one is still the best . you get thick cake pancakes and they rise very well we measured once and they were up to 3/4 in thick. This is a very plain recipe sometime i omit the vanilla and/or add fruit and or nuts.. If the batter is a little thicker than you like it , just add more milk, just be careful not to add to much ad they will not rise as much and be more like a flapjack(thin and chewy).
