Categories     Quick Breads

Time 30m

Yield 12 serving(s)

Number Of Ingredients 12

2 egg whites
1 cup skim milk
1 teaspoon vinegar
1/2 cup brown sugar
1/4 cup softened butter
1/4 cup unsweetened applesauce
1 cup graham cracker crumbs
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup chopped dates

Steps:

  • Mix the milk and vinegar together.
  • Preheat the oven to 400 degrees.
  • In a large mixing bowl beat the egg whites and milk mixture.
  • Add the brown sugar, butter, and applesauce.
  • Add the rest of the ingredients and mix together.
  • Spray a muffin tin with non-stick spray and fill the cups.
  • Bake for 20 to 25 minutes.

Tips:

  • Soften Butter Properly: Make sure the butter is at room temperature (about 65-70°F or 18-21°C) before creaming it with sugar. This will help incorporate air into the mixture, resulting in a lighter and fluffier muffin.
  • Measure Ingredients Accurately: Use a kitchen scale to measure ingredients, especially flour and sugar. This ensures precise measurements and consistent results.
  • Do Not Overmix: Overmixing can result in tough muffins. Mix the batter just until the ingredients are combined. A few small lumps are perfectly acceptable.
  • Fill Muffin Cups Properly: Fill the muffin cups about ⅔ full. Overfilling can cause the muffins to rise too much and spill over the edges.
  • Bake Until a Toothpick Inserted into the Center Comes Out Clean: This is the best way to ensure that the muffins are cooked through. Overbaking can dry out the muffins.

Conclusion:

These graham cracker muffins are a delicious and easy-to-make treat that can be enjoyed by people of all ages. They're perfect for breakfast, lunch, or a snack. With a few simple ingredients and a little bit of time, you can create a batch of these muffins that will be sure to please everyone. So, preheat your oven, gather your ingredients, and let's get baking!
