1 (16 ounce) package frozen loaf garlic bread
2 medium onions
2 boneless New York strip steaks (3/4 inch cut)
1 tablespoon crushed peppercorn, and garlic rub
1/4 cup chopped fresh parsley
2 tablespoons balsamic vinegar
4 slices blue cheese, shredded
2 tablespoons butter, melted
2 pressed garlic cloves
1 (6 ounce) bag plain potato chips

Steps:

  • Place garlic bread on a large sheet pan, and bake according to package directions.
  • Slice onions thin and microvave covered on high for 5 minutes.
  • Heat a pan on medium-high for 5 minutes, while the onions are in the microwave.
  • Season steaks with rub, and cook 5-10 minutes , or until browned.
  • Turn steaks over and repeat, until done, it should have a medium-rare doneness.
  • Remove steak from pan, and lightly cover with foil.
  • Chop parsley, and then add the parsley, onions, and vinegar to pan.
  • Cook 3-4 minutes or until the onions are carmelized.
  • Slice steal into 1/2 inch pieces, and place steak and onion mixture over one garlic bread half.
  • Sprinkle with cheese, and top with other garlic bread half.
  • Cut sandwich into 6 pieces.
  • FOR THE SEASONED CHIPS:.
  • Combine 2 tablespoons butter, melted with 2 pressed garlic cloves.
  • Add 1/4 cup freshed parsley.
  • Toss 6 ounces plain potato chips with butter mixture.
  • Bake on medium sheet pan at 450 degrees for 3-5 minutes.

1 (12-ounce) 1-inch thick New York strip boneless beef top loin steak
Kosher salt
Freshly ground black pepper
Olive oil
2 yellow onions, sliced in rings
1/2 teaspoon fresh thyme leaves
1 recipe Mustard Mayo, recipe follows
2 mini focaccia buns, sliced in 1/2
1/2 cup baby arugula
3/4 cup good mayonnaise
1 tablespoon Dijon mustard
1 tablespoon whole-grain mustard
2 tablespoons sour cream
1/8 teaspoon kosher salt

Steps:

  • Season the steak liberally with salt and pepper on both sides. Heat 1 tablespoon of olive oil in a medium saute pan over high heat until it's almost smoking, then sear the steak on each side for 1 minute. Reduce the heat to low and cook the steak for about 7 to 10 minutes, turning once, until very rare in the middle. Remove to a plate, cover tightly with aluminum foil, and allow to sit for 10 minutes. Slice the steak into strips.
  • Using the same saute pan, heat 1 1/2 tablespoons of olive oil over medium heat. Add the onion and thyme and saute for 10 minutes, until the onions are brown and caramelized, stirring occasionally.
  • To assemble the sandwiches, spread a tablespoon of Mustard Mayo on the bottom half of each bun. Place a layer the steak strips on top of the mayo, sprinkle with salt and pepper, and top with the caramelized onion rings. Place the baby arugula on top of the onion rings, and cover the sandwiches with the top half of the buns.
  • Mustard Mayo:
  • Whisk the ingredients together in a small bowl. Serve at room temperature.

4 minute steaks
4 turkish bread rolls (halved)
cos lettuce
olive oil
red onion (sliced)
1 tablespoon balsamic vinegar
1 1/2 tablespoons honey
sun-dried tomato
3/4 cup sour cream
1/2 tablespoon basil
1 tablespoon lemon juice
3 large potatoes
2 tablespoons moroccan seasoning
3/4 cup mayonnaise
1 teaspoon sweet paprika
1/2 teaspoon minced garlic
2 teaspoons lemon juice

Steps:

  • Preheat oven to 200°c.
  • Cut potatoes into sticks. Place in a plastic freezer bag with the moroccan seasoning and shake until coated. Spread out in a single layer on a baking tray and cook in oven for 20 minutes, turning once.
  • While chips are cooking, mix sour cream, lemon juice and basil in a small bowl. Set aside.
  • In a seperate bowl, mix mayonnaise, paprika, garlic and lemon juice. Set aside.
  • Heat some olive oil in pan. Add onions, honey and balsamic vinegar and cook until caramelised. While onions are cooking, grill steak until just cooked through.
  • Place minute steak, onion, a few slices of semi-dried tomato, a spoonful of the sour cream mixture and the cos lettuce between two halves of the turkish bread.
  • Serve with some chips and a dollop of the seasoned mayonaisse!

2 beef strip steaks ((10 ounces each) about 1-inch thick each*)
Kosher salt
Ground black pepper
2 1/2 tablespoons extra virgin olive oil (divided)
2 large red onions (thinly sliced)
1 tablespoon Dijon mustard
2 tablespoons melted unsalted butter
8 mini-sized French rolls, (pretzel buns, or similar soft, but sturdy buns)
1 1/2 cups arugula
8 ounces Brie cheese (cut into thin slices)
1/2 cup fig jam

Steps:

  • Preheat the oven to 350 degrees F. Remove steak from the refrigerator and place on a plate. Season liberally with salt and pepper on both sides. Let come to room temperature while you caramelize the onions.
  • Prepare the Dijon onions: Heat 1 tablespoon olive oil in a large sautee pan over medium high. Add the sliced red onions and 1/4 teaspoon kosher salt. Cook until the onions begin to soften and brown, 5-8 minutes. Reduce heat to low and let cook, stirring occasionally, until the onions are very soft and caramelized, about 15 additional minutes.   • Spread the melted butter onto the bottom of a 9x13-inch baking dish, using just enough to coat the pan. Lay the bottom of the buns in a single layer in the baking dish, then top with the arugula, steak slices, Brie, and the caramelized onions. Spread the inside of the top buns with about 2 teaspoons jam, then lay the buns on top to complete the sandwiches. Brush the bun tops with the remaining melted butter, then cover the pan with foil. Every college has one: some kind of nasty-fantastic amalgam of cheese and meat and grease and bread and salt and melting awesomeness. From freshman year to graduation, you can eat these things twice a week and it will hurt you, but not badly - that is the magic of youth and appetite and America combined. After that, such a sandwich must be counted a special treat, and adapted to adult use. For this cheese steak sandwich, a version of the Screaming Eagle served in the dining halls of Boston College, the Jesuit university in Chestnut Hill, Mass., I made two essential changes: I used Cheddar in place of the usual white American the college uses; and I replaced the thin-shaved steak that is a hallmark of cheese steaks the world over with skirt steak. Doing so recalled Corinthians. When you are a child, American cheese and shaved steak can count as ambrosia. As an adult, it's kind of nasty. But skirt steak? Melting Cheddar? That is actually ambrosial. The fiery mayonnaise does the rest.

3/4 cup mayonnaise
3 chipotle peppers in adobo sauce, minced, or more to taste
2 tablespoons neutral cooking oil, like canola
1 large white onion, peeled and sliced thin
2 red bell peppers, seeded and sliced thin
1 green bell pepper, seeded and sliced thin
Kosher salt and freshly ground black pepper to taste
1 tablespoon unsalted butter
1 pound button mushrooms, cleaned and sliced thin
2 1/2 pounds skirt steak, cut into 6 equal-size sections
6 large sub rolls or Italian bread cut into 6 submarine-shaped pieces of 8 to 10 inches, sliced down the center
1/2 pound sharp Cheddar cheese, sliced thin

Steps:

  • To make chipotle mayonnaise: Combine mayonnaise and minced peppers in a small bowl and stir well. (Leftover sauce may be covered and stored safely in the refrigerator for weeks.)
  • To make toppings for sandwich: Heat a griddle or a large, heavy frying pan, ideally cast iron, over medium heat. Add oil to pan and, when it begins to shimmer, add the onion and peppers and stir to combine. Cook, stirring every so often, until they begin to soften and brown, approximately 15 to 20 minutes. Season to taste with salt and pepper, remove and set aside. Wipe pan, add butter and repeat process with mushrooms. Cook until they have released their juices and are soft and glazed, about 6 minutes. Remove and set aside.
  • To make steaks: Heat griddle or frying pan over high heat until nearly smoking. Season meat aggressively with salt and pepper. Place steaks on griddle, working in batches if necessary, and cook for 3 minutes each side, until well browned but very rare. Remove to a serving platter and allow to rest.
  • To make sandwiches: Preheat oven to 200 degrees. When steaks are complete, slice them against the grain as thinly as possible. Place sub rolls in oven to warm. Return sliced steaks to griddle or frying pan, over medium heat, and add onions, peppers and mushrooms. Stir to combine, turn heat to low and cover with sliced cheese. Using tongs and a wide spatula, stir and pull to combine as cheese melts, approximately 3 minutes.
  • To serve: Remove rolls from oven and spread chipotle mayonnaise on the interior of each serving. Fill each sub with a mixture of meat, vegetables and cheese. Serve immediately.

2 tablespoons butter
¼ medium onion, sliced
4 large fresh mushrooms, sliced
¼ green bell pepper, sliced into long strips
1 (1/2 pound) well-marbled beef steak of any type, sliced as thinly as possible
3 tablespoons chopped pickled hot peppers
1 teaspoon hot pepper sauce
2 slices sharp Cheddar cheese
salt and pepper to taste
⅓ French baguette, cut in half lengthwise

Steps:

  • Melt 1 tablespoon of butter in a large skillet over medium heat. Add the onion; cook and stir until tender. Push onion to the side of the pan, and add the mushrooms.
