Time 40m

Yield 24 appetizers

Number Of Ingredients 5

12 baby potatoes
4 slices prosciutto, cut into strips
3/4 cup cheddar cheese, finely grated
sour cream, dollops
chives, finely chopped, to garnish

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Slice potatoes in half. Using a melon baller, scoop out flesh from each half, leaving at least 1/4 inch of flesh around sides and bottom.
  • Place hollowed-out potatoes on a foil-lined baking sheet, cut side up.
  • Bake until tender, about 20 to 25 minutes.
  • Stuff potatoes with prosciutto strips; top with cheddar cheese.
  • Bake until cheese is melted, about 2 more minutes.
  • Top each half with sour cream and chives.

Tips:

  • Choose the right potatoes: Russet potatoes are best for potato skins. They are large and have a thick skin that will hold up well when baked.
  • Scrub the potatoes thoroughly: This will help to remove any dirt or debris. Scrubbing the potatoes will also help to roughen their skin, which will help the toppings to adhere.
  • Bake the potatoes until they are soft: The potatoes should be soft enough to easily pierce with a fork. You can check the doneness of the potatoes by inserting a toothpick or skewer into the center. If it goes in easily, the potatoes are done.
  • Let the potatoes cool slightly before scooping out the flesh: This will make it easier to handle the potatoes and prevent them from breaking apart.
  • Be generous with the toppings: Potato skins can handle a lot of toppings. Don't be afraid to load them up with your favorite ingredients.
  • Serve the potato skins hot: Potato skins are best enjoyed when they are hot and crispy. Serve them immediately with your favorite dipping sauce.

Conclusion:

Potato skins are a delicious and versatile appetizer that can be enjoyed by people of all ages. They are easy to make and can be tailored to your own personal taste. With so many different topping options to choose from, the possibilities are endless. Next time you are looking for a tasty and satisfying snack, give potato skins a try. You won't be disappointed!
