GREEN TOMATO SALAD

Green Tomato Salad image

Green tomatoes are either nearly impossible to find or in such abundance that farmers at the greenmarket almost give them away. This recipe was inspired by Rachael Ray, who gets green tomatoes from a wholesaler when they're scarce or has a favorite farmer at the Union Square Greenmarket in Manhattan set some aside during the late spring and early summer when they're abundant. You can adjust the amount of peppers to control the heat. And red tomatoes work fine if you can't find green ones.

This simple salad of ripe tomatoes with fragrant herbs and finely diced shallots makes a refreshing side salad or buffet dish

Provided by Sarah Cook

Categories     Buffet, Side dish

Time 20m

Yield Serves 6 for a starter or lunch, or 8-10 with other dishes

Number Of Ingredients 6

1.25kg-1.5kg ripe tomatoes - as many colours, shapes, sizes and flavours as you can find
50g mixed soft herb - we used chives, thyme, parsley and mint
5-6 shallots , diced as finely as you can
3 tbsp extra virgin olive oil
3 tbsp white wine vinegar
1 tbsp clear honey

Steps:

  • Slice the large-to-medium tomatoes and halve the smallest. Pick the leaves from the herbs and roughly chop, then mix the herbs with the shallots.
  • Choose a large platter and start layering up the tomatoes, mixing colours and sizes. As you finish each layer, scatter with some of the herb-shallot mix and some ground black pepper. Keep layering until everything is used up. Cover and chill for a few hrs. Bring to room temperature 45 mins before serving.
  • Whisk together the dressing ingredients with some salt, then drizzle over the salad and serve.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will make a big difference in the final salad, so be sure to use the best you can find. Look for tomatoes that are deep red and have a slight give when you gently squeeze them.
  • Use a variety of tomatoes: Don't be afraid to mix and match different types of tomatoes in your salad. Cherry tomatoes, grape tomatoes, and heirloom tomatoes all have their unique flavor and texture that can add depth to the dish.
  • Slice the tomatoes evenly: This will help them cook evenly and look more appealing in the salad. If you're using cherry or grape tomatoes, you can simply halve them.
  • Use fresh herbs: Fresh herbs like basil, oregano, and thyme can really brighten up the flavor of the salad. If you don't have any fresh herbs on hand, you can use dried herbs, but be sure to use less since they're more concentrated.
  • Don't overdress the salad: A little bit of dressing goes a long way, so be careful not to overdo it. You want the flavors of the tomatoes to shine through, not be masked by the dressing.
  • Serve the salad immediately: Tomato salad is best enjoyed fresh, so serve it as soon as you've made it. If you need to make it ahead of time, dress the salad just before serving.

Conclusion:

Gourmet Garden Tomato Salad is a simple but delicious salad that's perfect for any occasion. It's easy to make and can be tailored to your liking. Whether you like your salad classic or with a little bit of a twist, this recipe is sure to please.
