1/2 tbsp butter
1/2 tbsp olive oil
3 cloves garlic, chopped
1 lb raw large shrimp, peeled and deveined
1/2 cup white wine
salt and pepper, to taste
1 cup basil leaves, roughly chopped
1/2 cup crumbled gorgonzola cheese
1/2 lb penne, cooked according to package directions

Steps:

  • In a large skillet, combine the butter and olive oil. Heat on medium, until the butter is melted, occasionally swirling the pan to combine.
  • Add the garlic and cook, stirring occasionally, for 2-3 minutes until softened (do not let it brown!).
  • Add the shrimp to the pan and stir to coat. Cook, flipping the shrimp, until just barely pink on both sides.

1/2 cup dry white wine or reduced-sodium chicken broth
6 ounces fresh baby spinach (about 3 cups)
4 ounces reduced-fat cream cheese, cubed
1/2 cup crumbled Gorgonzola cheese
3 tablespoons minced fresh parsley
1/4 teaspoon salt
1/3 cup chopped walnuts

  • Cook penne according to package directions for al dente. Meanwhile, in a large cast-iron skillet or Dutch oven, heat oil over medium heat.
