Number Of Ingredients 9

2 cups all-purpose flour
1 cup butter, softened
2/3 cup confectioners' sugar
1/2 cup chopped pistachios
1 cup confectioners' sugar

Tips:

  • Use high-quality ingredients. This will make a big difference in the final flavor of your shortbread wafers.
  • Make sure your butter is cold before you start. This will help to keep the wafers from spreading too much in the oven.
  • Work quickly when you are assembling the wafers. The dough can become difficult to handle if it gets too warm.
  • Bake the wafers until they are just golden brown. Overbaking will make them dry and crumbly.
  • Let the wafers cool completely before you store them. This will help to prevent them from breaking.

Conclusion:

Gorgonzola and pistachio shortbread wafers are a delicious and unique treat that are perfect for any occasion. They are easy to make and can be customized to your own taste. Whether you enjoy them as a snack, dessert, or appetizer, these wafers are sure to be a hit.
