I don't have access to fresh gooseberries, so I rely on Oregon Fruit Products Co for its canned berries! The original of this recipe was found on their website, www.oregonfruits.com! Preparation time does not include the time needed for the finished bars to cool.

1 cup all-purpose flour
1/4 cup powdered sugar
1/2 cup unsalted butter, cold & cut into 8 pieces
3/4 cup pecans, finely chopped
1 (15 ounce) can gooseberries
1 cup granulated sugar
1 1/2 tablespoons cornstarch

Steps:

  • Preheat oven to 350 degrees F & set out a 9-inch square baking pan.
  • In a bowl, combine flour, powdered sugar & nuts, then cut in the butter until mixture resembles coarse meal.
  • Press flour mixture evenly into the baking pan & bake 15 minutes.
  • About 5 minutes before crust is done, in a saucepan combine gooseberries, sugar & cornstarch, cooking & stirring about 4 to 5 minutes or until thickened.
  • Pour over baked crust, then let cool completely, before slicing & serving!

1 recipe pastry for a 9 inch double crust pie
1 ½ cups white sugar
½ cup all-purpose flour
4 cups fresh gooseberries
2 tablespoons butter

Steps:

  • Preheat oven to 425 degrees F (220 degrees C.) Roll dough out to fit a 9 inch pie plate. Place bottom crust in pie plate. Roll out top crust and set aside. In a small bowl, mix together sugar and flour.
  • Place 2 cups of berries in the pastry lined pie pan and sprinkle with half of sugar mixture. Put in remaining two cups of gooseberries, then sprinkle on remaining sugar mixture. Dot with butter. Cover with top crust and seal and flute edge. Cut a few slits in the top to allow steam to escape.
  • Bake in the preheated oven for 35 to 40 minutes, or until golden brown. Allow to cool. You may wish to cover the edge of pie with foil to prevent over-browning. If you do so, remove the foil for the final 15 minutes of baking.

Gooseberry's are only in season for a few weeks each year but the freeze well. I got the original recipe from a friend in the Republic of Panama about 27 years ago and Have done some tweeking for my families tastes. My son LOVES these bars.

CRUST:
2 c all-purpose flour
1 c brown sugar
1 c butter, cold
TOPPING:
2 eggs
1 c brown sugar, firmly packed
1 1/4 c all purpose flour
1/2 tsp baking powder
1/2 tsp salt
2 c gooseberries cooked ( i cook mine with 1 tbsp sugar per 1/2 cup berries and a little water for 10-15 minutes then hit with imersion blender till well blended.)
3/4 c honey

Steps:

  • 1. CRUST: Blend together butter flour and brown sugar with pastry blender until crumbly and well blended. Press into pan and bake at 350 degrees for 20 minutes.
  • 2. TOPPING: Beat eggs and brown sugar until fluffy. Add baking powder and salt to flour; blend into egg mixture. Stir in gooseberries. Spread over baked crust. Bake for 20-25 minutes.
  • 3. Cool on cooling rack and cut into bars.

1/4 cup sugar
1-1/2 teaspoons baking powder
1/8 teaspoon salt
1/2 cup cold butter, cubed
1 egg
1/4 cup milk
FILLING:
1 cup sugar
2 tablespoons quick-cooking tapioca
2 cans (15 ounces each) gooseberries, drained
TOPPING:
1 tablespoon milk
3 tablespoons sugar
1/2 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt; cut in the butter until crumbly. In a small bowl, whisk egg and milk. Gradually add to flour mixture, tossing with a fork until dough forms a ball. Cover and refrigerate for 20 minutes or until easy to handle., For filling, in a large bowl, combine sugar and tapioca. Gently stir in gooseberries; let stand for 15 minutes. Divide dough in half. Roll out each portion to an 8-in. square. Place one portion in the bottom a greased 8-in. square baking dish. Top with filling and remaining pastry., Cut slits in pastry; brush with milk. Combine sugar and cinnamon; sprinkle over the top. Bake at 375° for 30-35 minutes or until lightly browned. Serve warm.

250g self-raising flour
125g ground almonds
125g light muscovado sugar
350g gooseberries , fresh or frozen
85g caster sugar , plus extra
50g flaked almonds

  • Heat oven to 190C/170C fan/gas 5. Line a 27 x 18cm baking tin with baking parchment.
  • Rub the butter into the flour, almonds and sugar to make crumbs, then firmly press two-thirds onto the base and sides of the tin. Toss the gooseberries with the caster sugar, then scatter over the top.
  • Mix the flaked almonds into the remaining crumbs, then scatter over the gooseberries. Bake for 50 mins-1 hr until golden and the fruit is bubbling a little around the edges.
