CRUST:
2 c all-purpose flour
1 c brown sugar
1 c butter, cold
TOPPING:
2 eggs
1 c brown sugar, firmly packed
1 1/4 c all purpose flour
1/2 tsp baking powder
1/2 tsp salt
2 c gooseberries cooked ( i cook mine with 1 tbsp sugar per 1/2 cup berries and a little water for 10-15 minutes then hit with imersion blender till well blended.)
3/4 c honey

Steps:

  • 1. CRUST: Blend together butter flour and brown sugar with pastry blender until crumbly and well blended. Press into pan and bake at 350 degrees for 20 minutes.
  • 2. TOPPING: Beat eggs and brown sugar until fluffy. Add baking powder and salt to flour; blend into egg mixture. Stir in gooseberries. Spread over baked crust. Bake for 20-25 minutes.
  • 3. Cool on cooling rack and cut into bars.

Tips:

  • Use fresh gooseberries: Fresh gooseberries have the best flavor and texture. If you can't find fresh gooseberries, you can use frozen or canned gooseberries, but the flavor will not be as good.
  • Don't overcook the gooseberries: Gooseberries cook quickly, so it's important not to overcook them. Overcooked gooseberries will be mushy and lose their flavor.
  • Use a variety of spices: Gooseberries pair well with a variety of spices, such as cinnamon, nutmeg, and ginger. Experiment with different spices to find a combination that you like.
  • Chill the bars before serving: The bars will be easier to cut and serve if you chill them for at least 30 minutes before serving.

Conclusion:

Gooseberry bars are a delicious and easy-to-make treat that is perfect for any occasion. The combination of sweet and tart gooseberries, buttery crust, and crumbly topping is sure to please everyone. So next time you're looking for a new dessert to try, give gooseberry bars a try!
