3/4 cup dried black beans, washed, picked over and soaked for 6 hours or overnight in 3 cups water
3/4 cup dried red beans or kidney beans, washed, picked over and soaked for 6 hours or overnight in 3 cups water
2 onions, halved
4 garlic cloves, minced
Salt to taste
3/4 cup black-eyed peas, washed and picked over
1 bay leaf
1/4 cup red wine vinegar or sherry vinegar
1 garlic clove, minced
Salt and freshly ground pepper to taste
2 teaspoons lightly toasted cumin, ground
1 teaspoon Dijon mustard
1/2 cup broth from the beans
1/3 cup extra virgin olive oil
1 red bell pepper, diced
1/2 cup chopped cilantro

Steps:

  • Place a strainer over a bowl and drain the black beans. Add enough water to the soaking water to measure 6 cups. Drain the red beans and discard the soaking water. Combine the black and red beans, water, all but 1/2 onion, and 3 of the garlic cloves in a large, heavy pot and bring to a gentle boil. Reduce the heat, cover and simmer 1 hour. Add salt to taste (beans take a lot of salt) and continue to simmer for another 30 minutes, or until the beans are tender but intact. Remove and discard the onions. Set a strainer over a bowl and drain. Measure out 1/4 cup of the broth.
  • Meanwhile in a separate pot combine the black-eyed peas, remaining 1/2 onion and garlic clove, the bay leaf and 3 cups water. Bring to a boil, add salt to taste, cover, reduce the heat and simmer 45 minutes, or until the beans are tender but intact. Remove and discard the bay leaf and onion. Set a strainer over a bowl and drain. Measure out 1/4 cup of the broth and add to the black and red bean broth.
  • In a bowl or measuring cup, whisk together the dressing ingredients. Combine all of the beans in a large bowl and toss with the dressing. Taste and adjust salt. At this point the mixture can be refrigerated, or the salad can be served warm or at room temperature.
  • Stir the peppers and cilantro into the beans and serve.

5 ounces tuna, drained (I use solid white in water and can use more to make it a main course)

Steps:

  • Follow the directions for cooking the macaroni on the package. Drain pasta and rinse with cold water.

2 (3 ounce) packages of any ramen noodles (do not use the flavor packets)
4 green onions
1/2 cup butter
1/2 cup slivered almonds
1/2 cup sesame seeds

2 tablespoons soy sauce

Steps:

  • Dressing: combine ingredients and shake well.
  • Shred 1 head of Napa cabbage and add 4 green onions, sliced thin. Set aside.
  • Melt 1 stick of butter in a frying pan on medium heat and break up the 2 packages of ramen noodles, (DO NOT USE THE FLAVOR PACKETS!) add to butter and cook until golden brown.

4 tsp sweet pickle relish

  • 1. Chop the ham in a food processor until it is the consistency you like. I prefer it very finely ground.

3 Tbsp white vinegar
2 tsp mustard seed
1 and 1/2 tsp celery seed
9 medium potatoes, (3 lbs)
1 c celery, peeled and chopped
1/2 c green onion, thinly sliced
3 - 4 hard-cooked eggs, roughly chopped
2 c mayonnaise (hellmans, best foods)
1 tsp salt
paprika, to taste

Steps:

  • 1. Combine vinegar, mustard seed, and celery seed. Let stand at room temperature for several hours. You can crush the seeds, if desired, but it really is not necessary.
  • 2. In covered saucepan, cook potatoes until barely tender; 25 to 30 minutes; drain.
  • 3. In a large bowl, sprinkle the potatoes with 1/2 of the salt. Add celery, onion, and chopped eggs; toss lightly.
  • 4. Combine mayonnaise, remaining salt, and vinegar mixture; add to potatoes; toss to mix. Chill; sprinkle with paprika.

2 pounds potatoes (about 6 medium)
2/3 cup sliced celery
1/8 cup onion, grated or finely chopped
1-1/2 carrots, grated on large holes
1 Tablespoon spicy mustard
1/3 cup mayonnaise
1/3 teaspoon salt
1/3 teaspoon pepper
¼ cup salad oil
Paprika (garnish)
Parsley (garnish)

Steps:

  • Boil potatoes with the skins still on until they're cooked but still firm. (For medium potatoes, this will take about 12 minutes from start of boil.) When the potatoes are done, drain them well, and let them sit in the pot for a few minutes until the crackling sound stops. Cool and peel the potatoes. Cut into chunks. While waiting for the potatoes to cool, prepare the remaining ingredients and combine all in a large bowl except the paprika and parsley. Add the potatoes to the large bowl. Mix with remaining ingredients except garnish. Chill the combined potato salad. Add garnish when ready to serve.
