The recipe comes from the famed Columbia Restaurant which started in Ybor City, FL and now has locations throughout Florida. Easy to make and very flavorful; I especially like the texture...not sticky, not greasy, just right.

1/2 cup butter
1 large onion, chopped
2 cups long-grain rice
4 cups chicken broth (I prefer to use low sodium broth)
1/2 cup parsley, fresh, chopped
1/2 cup basil, fresh, chopped

Steps:

  • Melt butter and saute' onion until transparent. Add rice and stir constantly until it turns into a caramel color. Add chicken broth, then parsley, basil and salt. Bring to a boil and lower flame. Cover and steam rice for 18 minutes. Fluff with a large two-tined fork. Serves 6 to 8.

3 cups water
1/2 cup onion, chopped
2/3 ounce Good Seasonings Italian salad dressing mix (one envelope)
1 1/2 cups instant brown rice
sour cream (optional)
red pepper, chopped (optional)
cilantro, chopped (optional)

Steps:

  • Place 1 1/2 can of beans in a blender; cover.
  • Blend until smooth.
  • Pour into a large saucepan.
  • Add remaining beans, the water, onions and salad dressing mix; stir until well blended.
  • Bring to boil on medium-high heat.
  • Stir in rice.
  • Reduce heat to low and cover.
  • Simmer 5 minutes.
  • If desired, garnish with sour cream, chopped red peppers and/or cilantro.

1 lb pork chop, center cut and thin sliced
1 medium red onion, diced
1 minced garlic clove
1/2 cup soy sauce
3 tablespoons granulated sugar
1 tablespoon Accent seasoning
1 teaspoon salt
1 teaspoon pepper
3/4 cup peanut oil
1 lb of frozen stir fry vegetables
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
2 cups uncooked white rice

Steps:

  • Trim off any fat or bone from pork chops. Cut pork into long, slender strips about 1/2 inch wide or less. Place pork strips in a shallow dish in one single layer and set aside.
  • In a medium bowl, combine diced onion, sugar, Accent, salt, pepper, garlic, and soy sauce. Pour this mixture over the pork strips, cover, and put in refrigerator to marinate for 30 minutes.
  • Add about 1/2 cup peanut oil to a large frying pan and heat oil over medium-high heat. Place the pork strips and all of the marinade into the pan, reduce heat to medium. As the marinade/onion begins to thicken around the pork, you may add water to dilute this sauce.
  • Simmer the pork slowly, covered, over low-medium heat until pork is tender, about 45 minutes to an hour. (A great time to go to the next step!).
  • Cut the bell peppers into long thin strips, removing and discarding all seeds.
  • In a large frying pan or wok, coat the bottom of the pan with about 1/4 cup of the peanut oil. Heat oil over medium-high heat.
  • Add the frozen vegetables and begin cooking over medium heat, stirring occasionally.
  • Add the bell pepper strips to the stir fry vegetables, cooking to desired tenderness in wok or frying pan. (I cooked mine for about 30 minutes, and it rendered veggies tender, not too soft.).
  • Cook rice according to package directions, drain and rinse, then set aside.
  • Serve the pork and vegetables over the rice and hope you enjoy it as we did! Easily serves 6 or more. 30 minutes of the cooking time is for marinating in frig.

4 cups diced cooked chicken or 4 cups turkey
2 packages cooked 10-minute Success rice
3/4 cup diced celery
3/4 cup diced onion
2 tablespoons butter
1 can cream of mushroom soup
1 cup mayonnaise
1 cup sour cream
1 can mushrooms or 1 cup sliced fresh mushrooms
1 can diced green chilis
1 teaspoon oregano
1/2-1 teaspoon garlic powder
1/2-1 teaspoon season salt
1/2-1 teaspoon pepper
2 cups shredded sharp cheddar cheese
3/4 cup fine corn flake crumbs

Steps:

  • Saute celery and onions in butter.

4 tablespoons extra-virgin olive oil, divided
1 cup white rice, such as Carolina brand
6 cups chicken or vegetable stock
4 to 5 sprigs fresh thyme
2 tablespoons butter
4 cloves garlic, finely chopped
3 to 4 ribs celery from the heart, chopped with greens
1 red bell pepper, chopped
1 large yellow onion, chopped
Salt and pepper
1 teaspoon sweet paprika, 1/3 palm full
1 bay leaf, fresh or dried
3 tablespoons all-purpose flour
1 bottle pale beer
3 to 6 teaspoons hot sauce (recommended: Frank's Red Hot) medium to spicy heat level
1 tablespoons Worcestershire sauce, eyeball it
1 (15-ounce) can petite diced, crushed or stewed tomatoes
4 to 5 cups, 2 bundles, dandelion greens, stemmed and chopped
1/4 teaspoon grated nutmeg
2 teaspoons lemon zest
2 scallions, finely chopped

Steps:

  • Heat a sauce pot over medium heat. Add 2 tablespoons extra-virgin olive oil and rice. Toast rice 2 minutes, add 2 cups stock and thyme sprigs and bring to a boil. Cover the pot, reduce heat to simmer and cook 18 minutes or until tender.
  • Heat a soup pot over medium to medium high heat. Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan, and 2 tablespoons butter to the pot. When butter melts into oil, add garlic, celery, bell pepper and onion and season with salt, pepper and paprika. Cook to soften veggies, 5 minutes. Add bay leaf and flour and cook the flour another minute. Stir in the beer and reduce the liquid by half, a minute or so. Add hot sauce, Worcestershire and tomatoes. Add 1 quart stock to the pot, stir in the greens and season with nutmeg. Raise heat to bring to a quick boil then simmer 15 minutes until greens are no longer bitter. Adjust seasonings, to taste.
  • Uncover rice and add lemon zest and scallions. Remove the thyme stems and fluff rice with a fork. Remove bay from gumbo. Scoop up gumbo and top with scoops of rice and serve.

3 tablespoons olive oil
1 onion, chopped
2 garlic cloves, crushed
2 -3 eggs, slightly scrambled
1 cup frozen mixed vegetables
3 green onions, chopped
1 cup cooked chicken (optional) or 1 cup cooked beef, diced (optional)
3 tablespoons soy sauce
5 -10 drops sesame oil (optional)

Steps:

  • Place brown rice and water in pot with tight fitting lid - bring to boil, then simmer for 40 minutes or until water is absorbed (or use left over brown rice).
  • In large skillet or wok, heat olive oil over med-high heat - add onions and garlic, cook until soft.
  • Push onions and garlic to the side, add eggs, and cook, stirring constantly.
  • Add vegetables (I usually add more than 1 cup) and rice, left over meat(if you choose to), and green onions - continue stirring.
  • Add soy sauce and sesame oil - heat through.
  • To freeze: Place in a rigid container and freeze. Note: If you plan on freezing part of this you may want to omit the soy sauce and sesame oil until reheat.
  • To heat: Thaw, put in a baking dish, covered with foil and reheat at 350F for 30 minutes or until heated through.

1 (250 g) bag miniature marshmallows (about 4 cups)
1/2 teaspoon vanilla
6 cups Rice Krispies
1/2 cup butter
4 macintosh toffee bars (MacIntoch bars work well)
1 (14 ounce) can sweetened condensed milk
0.5 (16 ounce) bag miniature marshmallows

Steps:

  • Melt first amount of butter and marshmallows in microwave for 2 minutes on high.
  • Mix until mixture is well blended.
  • Stir in vanilla and cereal until well coated with marshmallow mixture.
  • Press warm marshmallow mixture in a large greased cake pan, (lasagna size pan works well). Cool.
  • Melt the second amount of butter, toffee bars and condensed milk in microwave or over low heat on the stove, be careful not to burn.
  • Spread toffee mixture over R.K.cake layer, then sprinkle with a layer of marshmallows. Cool.
  • Top with another layer of a regular recipe of Rice Krispies cake. Cool.
