Yield about 4 cups

Number Of Ingredients 6

1/2 cup mayonnaise, plus more if needed
2 tablespoons whole-grain mustard
1 pound leftover baked ham, cut into 1-inch chunks
1 1/4 cups drained bread-and-butter pickle chips and 1 tablespoon pickle juice, plus more if needed
2 inner ribs celery, finely chopped, plus 2 tablespoons coarsely chopped leaves from the inner ribs
1/2 small red onion, finely chopped

Steps:

  • Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.

GARNISH:
2 cups ham, fat trimmed off and diced
1/2 cup miracle whip
1/4 cup mayo
2 teaspoons dried onion flakes
1 teaspoon stone ground mustard
1 tablespoon sweet pickle relish (You could use Dill pickle relish instead if you prefer)
Butter crackers
Swiss cheese slices, cut into squares

Steps:

  • Dice the ham into small 1/2" cubes. Add all of the remaining ingredients except for the relish to a food processor and pulse until chunky. You want it to be smooth enough to spread on crackers, but not so smooth that it becomes a paste. Check every few pulses and watch closely to get the desired consistency. Transfer the spread to a mixing bowl and stir in relish. Serve with crackers and Swiss cheese.

Tips for Making the Best Hoosier Ham Salad:

  • Use high-quality ingredients: Fresh and flavorful ingredients will make a big difference in the taste of your ham salad. Look for a good-quality ham, fresh vegetables, and a tangy dressing.
  • Don't over-chop the ingredients: You want the ingredients in your ham salad to be bite-sized, but not so small that they lose their texture. A few larger pieces of ham or celery add a nice contrast to the smaller pieces.
  • Use a light hand with the dressing: The dressing should enhance the flavor of the ingredients, not overpower them. Start with a small amount of dressing and add more to taste.
  • Chill the ham salad before serving: This will allow the flavors to meld and the salad to firm up. Serve the ham salad on bread, crackers, or a bed of lettuce.
  • Get creative with your add-ins: Feel free to add other ingredients to your ham salad, such as chopped hard-boiled eggs, shredded cheese, or pickled vegetables. You can also experiment with different dressings, such as a vinaigrette or a creamy dill dressing.

Conclusion:

Hoosier ham salad is a classic Midwestern dish that is perfect for a quick and easy lunch or dinner. It is also a great make-ahead meal, as it can be stored in the refrigerator for up to 3 days. With its simple ingredients and delicious flavor, Hoosier ham salad is a surefire hit with everyone who tries it.
