4 ounces of cheddar cheese
2 Tbsp finely chopped sweet onion
2 Tbsp finely sliced scallions, with greens
2 Tbsp mayonnaise
salt and peper to taste
4 slices of bread, toasted or untoasted
butter

Steps:

  • 1. Grate the cheese in a bowl.
  • 2. Add the onions and mayonnaise.

1/2 cup shredded Monterey Jack cheese

Steps:

  • Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in a large cast-iron skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with pepperoni; add sliced Brie. 1 cup grated Cheddar Cheese
1 cup grated Red Leicester Cheese
½ cup Red Onion, diced very fine
2 large Spring Onions, diced very fine
⅔ cup Mayonnaise
1 pinch Black Pepper
butter as needed
bread slices, soft

Steps:

  • Grate cheese and dice onion as finely as possible. In a medium mixing bowl add cheese, onion, mayonnaise and a good pinch of black pepper. Mix well then taste test and adjust seasoning as necessary.

1 tsp dark brown sugar
1 tbsp butter
50ml stout
1 tsp English mustard
75g grated cheddar
splash of Worcestershire sauce
1 small egg
2 slices of toast

  • Finely slice the red onions, then tip them into a large frying pan with the butter and a big pinch of salt. Cover and cook on a low-medium heat for 30 mins, stirring regularly. Take off the lid, then scatter with the sugar, season well and cook for 5 more mins until caramelised.
  • Meanwhile, melt the butter in a pan, then whisk in the stout and the English mustard. Stir in the grated cheddar and whisk until melted, then season and add a splash of Worcestershire sauce. Take off the heat, then whisk in the egg. Divide the onions between two toasts, top with dollops of the cheesy sauce, then grill for 2-3 mins until browning and bubbling.

2 -3 ounces of aged sharp cheddar cheese, sliced
