This creamy crock pot meal is comfort food at its best! It reminds me of chicken cordon bleu, without the fuss!

Number Of Ingredients 8

6 boneless skinless chicken breasts
3/4 cup butter or 3/4 cup margarine
1 teaspoon italian seasoning
1/8 teaspoon white pepper
1 (8 ounce) package cream cheese
1 (10 3/4 ounce) can cream of chicken soup
8 ounces fully cooked diced ham (1 cup)
cooked rice or pasta

Steps:

  • Dice chicken, and place in crock pot.
  • Cut butter into pieces, and distribute evenly over chicken.
  • Sprinkle Italian seasoning and white pepper over top, and place lid on crock pot.
  • Cook on low for 7-8 hours.
  • At end of cooking time, cut up the cream cheese, and drop into crock pot, together with the diced ham and chicken soup.
  • Stir, then replace lid.
  • Cook on high until cheese is melted.
  • Serve hot over rice or pasta.

I had to make something for my lunches for the week and it had to be WW friendly. I found most of this stuff in my cupboard and it turned out really good. Low in fat and full of flavor! After cooking I divided this up into 5 lunch containers.

4 chicken breasts
1/4 cup balsamic vinegar
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
4 large fresh garlic cloves
1/2 cup fresh cilantro
1 (8 ounce) can low-fat cream of chicken soup
2 cups rice

Steps:

  • Place everything in a crock pot, except for the rice, and cook on high for 5 hours. After 5 hours, remove chicken and cut into small chunks. Put back into sauce mix and add two cups quick cooking rice. Cook on high for an additional 30 minutes.

I don't think I've ever made crock pot roast the same twice but this one was really good so I decided I would post it so I could remember it next time. Few ingredients for an easy supper. Makes an excellent au jus or gravy.

2 -3 lbs eye of round roast
1 ounce herb brown gravy mix
1/2 cup water
6 red potatoes, quartered
2 tablespoons ranch dressing mix
1/2 teaspoon kosher salt
4 fresh carrots or 15 fresh baby carrots

Steps:

  • Rinse roast under cool water.
  • Add roast to crock pot.
  • Sprinkle brown gravy mix on and around roast.
  • Add 1/2 cup water around roast.
  • Add quartered potatoes around roast.
  • Sprinkle ranch mix over roast and potatoes.
  • Season potatoes with salt.
  • Set crock pot on high for 3 hours.
  • Cut carrots same size as quartered potatoes or if using baby carrots, use whole. Add carrots and additional 1/2 cup water if you like a thinner gravy or au jus.
  • Change setting to low for 2 more hours.
  • Slice roast on serving platter, surround with veggies.
  • Serve gravy or au jus on the side.
