GOOD OLD FASHIONED CHICKEN SOUP/STEW
There isn't anything more comforting on a snowy winter day than a bowl of homemade chicken soup. Don't let the list of ingredients turn you away. This is an extremely easy and flavourful soup to make. The soup is thicker the second day because of the added noodles. This also freezes extremely well.

Steps:
- In a large dutch oven or stock pot, add onion, celery, carrots, garlic and bay leaf. Place chicken on top, and add water. (If your pot will only hold 10 cups of water at first, the remaining water can be added later, as some of it will evaporate.) Cover and bring to a boil. Reduce heat to low, and simmer for 1-1/2 hours.
- Using a slotted spoon, remove chicken to a plate to cool. Strain the broth, and discard the vegetables.
- At this point, the broth may be cooled and frozen for later use, or you may continue on with the recipe. This is an excellent time to remove any remaining fat from the broth.
- Remove the meat from the bones, cut and set aside.
- Return the broth to a clean pot. Bring to a boil and add the potatoes, carrots, celery, onion, garlic, salt and pepper. Cover and simmer for 1/2 hour.
- Add the chicken, bouillon, frozen vegetables, and noodles. Simmer for 20 minutes.

- Place water and chicken thighs in a pot. Bring to a boil; reduce heat and simmer until chicken is tender, about 30 minutes. Occasionally skim off scum as it forms.
- Heat olive oil in a large pot over medium heat. Cook and stir carrots and onions until they begin to soften, 3 or 4 minutes. Stir in garlic and salt; cook for 1 minute.
- Transfer chicken and cooking water to large pot. Add chicken broth. Bring mixture to a boil; reduce heat to low. Cover, leaving lid slightly ajar, and simmer at least 1 hour or up to 4 hours. Remove from heat.
- Transfer chicken to a work surface. Remove skin, bones, and cartilage. Shred chicken meat using 2 forks. Return chicken to pot. Add broccoli, cauliflower, and zucchini. Bring back to a simmer over medium-high heat. Reduce heat so soup gently simmers. Cook until vegetables are tender, 20 to 30 minutes.

GOOD EATS 40 CLOVES AND A CHICKEN (ALTON BROWN)
Tender and succulent, this is fall-off-the-bone chicken, with tons of roasted garlic! This recipe can be made quicker and without too much fuss, it's suggested to purchase whole garlic cloves already peeled. They are usually found in a jar in the produce section and sometimes even packed in oil. :)

- Preheat oven to 350 degrees F. Season chicken with salt and pepper. Toss with 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat.

- Whisk together yogurt, garlic, 3 tablespoons paprika, 2 tablespoons olive oil, 1 tablespoon hot chile paste, and cayenne pepper in a large bowl.
- Mix in chicken pieces and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 3 hours.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Remove chicken from the bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels. Season with salt.

- Turn chicken and grill with lid closed until well-browned and meat is no longer pink in the center, about 6 minutes. An instant-read thermometer inserted into the thickest part of the thigh should read 180 degrees F (82 degrees C).
- Spoon sherry vinegar mixture over cooked chicken and serve.

EASY AND GOOD TERIYAKI CHICKEN DRUMETTES
This recipe make about 70 chicken drumettes, enough to feed a crowd, they are simply delicious! I have only used Kikkoman brand teriyaki glaze sauce for these, so I cannot say how they would be using another brand of teriyaki glaze. Save the other half of the wing for stock. Prep time does not include separating the wings in half.

- Set oven to 425 degrees.
- Prepare a large foil-lined baking sheet that has been lightly greased with cooking spray.
- In a large bowl combine soy sauce and sherry; add in the drumettes and toss in the sauce mixture to coat.

- Finely chop 2 tablespoons of green onions and set aside for the garnish. Cut remaining green onions into 1-inch pieces.

- Place cut up chicken in a large bowl. Season with garlic powder, salt, and black pepper. Toss to coat. Add buttermilk, again tossing to coat. Set aside (you can cover and refrigerate overnight).
- Place lard and bacon grease into a large deep cast-iron skillet or dutch oven (you only need about an inch of melted oil). Set on stovetop over medium-high heat and get oil temperature to 350°F.
- Place flour into a plastic grocery bag. Shake excess buttermilk from a piece of chicken and place into bag of flour. Coat chicken with flour. (A simple method is to hold sides of bag and steadily and gently roll back and forth like cleaning a bowling ball.).
- Dip an edge of the floured piece into the lard; if it sizzles, it's ready. Begin to flour remaining pieces and carefully place them into the pan/dutch oven.
- Repeat until the pan is full or all pieces are used. (A whole chicken generally requires two batches and you may need to add just a small amount more of lard for second batch). Cover pot with lid and simmer for 5-7 minutes.
- Turn chicken over, cover and simmer again for 5-7 minutes. Remove lid and continue cooking until cooked through, or internal temperature of chicken reaches 175°F.
- Transfer cooked pieces to a plate lined with paper towels or a baking rack with a towel underneath to catch the drippings. If desired, immediately give a light sprinkling of salt.

I have been trying out many chicken wing recipes and finally came up with a recipe that is easy to make, quick to cook and has a nice crunchy coating and it tastes so good.

- Remove wing tips and any loose skin and discard. Leave the remaining skin on if desired.
- Rinse wings in cold water, pat dry with paper towels and set aside.
- In a large zip-loc bag, combine flour, salt, cayenne pepper and paprika, shake well.
- Add chicken to the zip-loc bag, seal and toss to coat well. Refrigerate for 1 to 4 hours. "Chilling the chicken wings is important to achieve nice, crispy wings.".
- In a mixing bowl add Panko bread crumbs.
- In another bowl, whisk together eggs and milk until frothy.
- Remove chicken from the refrigerator and shake off any excess flour coating.
- Dip coated chicken in the egg mixture, then roll in the Panko bread crumbs until well coated.
- In a heavy bottom 12 inch frying pan or skillet, add oil and heat to 375°F.
- Place chicken in the pan with the main meat side up and fry for 6 minutes.
- Turn the chicken over and continue to fry for another 6 minutes. The wings should be nicely browned.
- Test for doneness by making a cut into the thick portion of the wing to make sure there is no pink showing.
- Remove chicken from the frying pan onto paper towels to absorb any excess oil, and immediately place in a large bowl.
- In a small saucepan, add butter, Sriracha hot chili sauce, black pepper, granulated garlic powder and heat just to boil, stirring constantly.
- Pour the hot sauce over the chicken wings and toss to coat well.
- Serve immediately or while they are still hot.
- You may also freeze the chicken after it is cooked and then reheated in a preheated 400 F oven for 10 minutes.
- NOTE: You may also use the following choices of hot sauces.
- 1 tablespoon of Red Hot Sauce - wings will be medium hot.
- 2 tablespoons of Sriracha Hot Chili Sauce - wings will be hot.
- 2 teaspoons of Sambal Oelek - wings will be very hot.

- In two (doubled) brown paper lunch sacks, combine dry ingredients (first seven or *eight including the red pepper flakes); shake well to mix.
- In shallow bowl, beat eggs, milk and hot sauce.
- Dip chicken pieces in egg mixture, let excess drip off, then shake in bag of dry ingredients to coat.
- Set on plate or sheet as you go.
- Then after all are coated, shake each piece again in the flour mixture.
- Place bone sides down onto greased, foiled-lined shallow baking pan or sheet.
- Spray the chicken with butter-flavored vegetable spray after coating with flour mixture just before putting in the oven. Then bake for 15 minutes so it can "set", then baste each piece well with melted butter.
- Bake, uncovered, at 350ºF for a total of 55-60 minutes or until done and juices run clear.
- (When I did leg-thigh quarters, they took exactly 59 minutes).
- If pieces are small, they will take less time, of course, so check.
- Don't over bake it.
- Now kick back, have a beer, relax and don't worry about it!
- It doesn't stick or even need to be turned! (Don't turn it BTW).
- Prepare the rest of your sides and...ENJOY!
FINGER LICKIN' GOOD CHICKEN MARINADE
I got the recipe for this incredibly tasty marinade from a neighbor at a cookout 17 years ago. I haven't found a better marinade for my chicken since then! I use it in baking chicken, but I mostly use it to grill chicken sandwiches, topped with Muenster cheese on a grilled Kaiser roll. Yummy!

- Combine mustard, lemon juice, garlic, rosemary, and pepper in a bowl.
- In a sealable bag combine bran flakes and cheese. Crush up the bran flakes slightly with hands on the outside of the bag.

- Preheat oven to 375 degrees F (190 degrees C).
- Sprinkle each flattened breast with garlic salt and pepper to taste on both sides. Lay a slice of ham onto each breast, then a slice of Swiss cheese. Roll each breast up like a cinnamon roll. Secure with a toothpick if necessary. Wrap a piece of bacon loosely around each roll. Place the rolled breasts in a 2 quart glass baking dish and pour in chicken broth.
