Having purchased a huge box of Goldfish Crackers at a warehouse store yesterday, I came up with this recipe for tonight's dinner. It is definitely a hit and I will be making it again very soon! Try dipping chicken into different sauces. Shown in the photo is Sweet Pepper Jalapeno Jam and Barbeque.

2-2 1/2 lb chicken breasts cut into tenders or strips
1 1/2 c goldfish crackers
1/2 c parmesan cheese
1 tsp pepper
1/4 tsp paprika
1 stick butter

Steps:

  • 1. Put crackers in a food processor and pulse until they are crumb-sized or crush in a plastic storage bag with rolling pin. Place crushed crackers in a bowl.
  • 2. Add parmesan cheese, pepper and paprika and mix together with crushed crackers. Melt butter in a separate bowl.
  • 3. Dip chicken in butter and roll in cracker mixture to coat. Place chicken on a foil lined cookie sheet, sprayed with non stick spray.
  • 4. Pour remaining butter over chicken pieces and bake at 375 degrees for 20-25 minutes. Remove from oven and flip. Bake for another 10 minutes or until golden brown and cooked through.
  • 5. Serve alone or with dipping sauce of your choice!

2 1/2 cups crushed cheddar goldfish crackers or 2 1/2 cups pretzels
2/3 cup bottled buttermilk ranch dressing
1 lb chicken tenderloins
nonstick cooking spray

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Line a baking pan with foil and spray foil with nonstick cooking spray.
  • Place the crushed Goldfish in one dish and the dressing in a separate dish.
  • Dip chicken tenderloins into the dressing (allow excess to drip off) and then dip into the crushed crackers; place the tenderloins on the baking pan.
  • Bake for 10-15 minutes or until chicken is no longer pink inside.

Look for panko breadcrumbs in the Asian section of your market. For even more kid appeal, serve the chicken fingers with a homemade honey mustard sauce, or a sweet-and-sour sauce made from apricot jam, cider vinegar, salt and pepper and a drop of hot sauce.

2/3 cup panko breadcrumbs (Japanese style breadcrumbs)
1/4 cup parmesan cheese, grated
2 tablespoons chopped grated fresh parsley (optional)
1/4 teaspoon ground black pepper
1 tablespoon Dijon mustard
2 egg whites
1 lb chicken tenders

Steps:

  • Place a rack in the top third of the oven. Heat oven to 425°F Set a wire rack on a baking sheet and coat rack lightly with cooking spray.
  • In a shallow bowl, stir together breadcrumbs, Parmesan cheese, parsley (if using), and pepper. In another shallow bowl, whisk together mustard and egg whites until frothy and opaque.
