Yield 4

Number Of Ingredients 7

1 cup of (2 sticks) unsalted butter, at room temperature
2 of tablespoons finely minced fresh chives
1 of clove garlic, minced
of Pinch of kosher salt
4 of sea bass fillets (4-6 ounces each)
of Kosher salt and freshly ground black pepper
2 tablespoons of olive oil

Steps:

  • In a medium bowl, with an electric mixer, beat the butter until light and fluffy.
  • Add the chives, garlic, and salt and mix until thoroughly combined. Spoon the mixture in the shape of a log onto a piece of wax or parchment paper.
  • Fold the paper over itself. Using your hands, shape the butter into a cylinder about 1 ½ inches wide (almost like making a Tootsie Roll). Once it is shaped, twist the ends to seal it.
  • Place in the freezer to set, about 20 minutes. Refrigerate until ready to serve or up to a month.
  • When ready to serve, slice the roll into ¼-inch-thick rounds and remove the parchment. (Only 4 slices of compound butter are need for this recipe.)
  • Preheat the oven to 375 degrees Fahrenheit.
  • Generously season the sea bass with salt and pepper. In a large cast iron skillet over medium heat, warm the oil until a few water droplets sizzle when carefully sprinkled in the skillet. Sear the sea bass, skin side up, until it is well browned and easily releases from pan, about 4 minutes. Flip over and cook until seared, about 1 minute. Transfer the pan to the oven and roast about 5 minutes or cooked to the desired degree of doneness.
  • Serve each fillet with a slice of compound butter on top.

Time 15m

Number Of Ingredients 5

1 pound Sea Bass (skin on or off)
1 tablespoon Olive Oil
pinch Sea Salt
pinch Black Pepper
optional 1/2 cup Chimichurri, see recipe footnotes

Steps:

  • Cut SEA BASS filet down the center to create 2 pieces (1/2 lb. each). Allow to rest 20 minutes at room temp to remove chill.
  • Heat OLIVE OIL in skillet over medium-high until it reaches the smoke point.
  • Place sea bass (skin side down) in the hot skillet. Sprinkle SALT and PEPPER over the filet.
  • If you want crispy skin, press the filet down firmly with a spatula until it becomes visibly crispy. Turn the filet over and allow the non-skin side to sear until the filet is opaque throughout, reducing heat a notch or two as needed.
  • Transfer the filet to a plate and allow to rest a few minutes.
  • Serve sea bass warm with your favorite salad and side dish. Suggested: serve over salad greens topped with Chimichurri Sauce (see recipe in footnotes).

Yield 2 servings

Number Of Ingredients 14

2 (6-ounce) sea bass fillets
Salt and freshly ground white pepper
1 ounce olive oil

1/2 cup bread (white, brioche or baguette), crust trimmed, cut into 1/2-inch cubes
8 ounces assorted baby vegetables (baby carrots, baby turnips, asparagus tips, yellow zucchini), blanched in salted boiling water
1/4 cup brunoise red bell peppers
1 tablespoon minced shallots

Tips:

- To achieve the perfect golden sea bass, ensure the fish is fresh and of good quality. - Before cooking, pat the sea bass dry with paper towels to remove excess moisture, which will help the skin crisp up. - Generously season the fish with salt and pepper inside and out to enhance its natural flavor. - Use a combination of butter and olive oil to fry the sea bass. Butter adds a rich flavor, while olive oil helps prevent burning. - Start by searing the fish over high heat to create a crispy skin, then reduce the heat and continue cooking until the fish is cooked through. - To ensure even cooking, flip the sea bass halfway through the cooking process. - Keep an eye on the cooking time, as overcooking can result in dry and tough fish. Flake the fish easily with a fork when it's cooked through. - Garnish the cooked sea bass with fresh herbs like parsley or cilantro, and a squeeze of lemon juice to enhance its flavor and visual appeal.

By following these tips and tricks, you can elevate your sea bass cooking skills and impress your friends and family with a delicious, restaurant-worthy dish.
