My family requests this rummy Bundt cake from me at all our get-togethers. The butter rum glaze makes it special. An easy way to glaze your cake is to pour half of the glaze into Bundt pan, reinsert cake, then pour the rest of glaze over the bottom of the cake. Let absorb well then invert back onto platter.

1 cup chopped walnuts
1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
½ cup water
½ cup vegetable oil
½ cup dark rum
½ cup butter
¼ cup water
1 cup white sugar
½ cup dark rum

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sprinkle chopped nuts evenly over the bottom of the pan.
  • In a large bowl, combine cake mix and pudding mix. Mix in the eggs, 1/2 cup water, oil and 1/2 cup rum. Blend well. Pour batter over chopped nuts in the pan.

1 cup pecans or 1 cup walnuts, chopped
1 (18 1/2 ounce) box yellow cake mix with pudding
3 eggs
1/2 cup cold water
1/3 cup vegetable oil
1/2 cup Bacardi dark rum
1/4 lb butter
1/4 cup water
1 cup granulated sugar
1/2 cup Bacardi dark rum

Steps:

  • CAKE: Preheat oven to 325°F Grease and flour 10-inch tube or 12-cup bundt pan. Sprinkle nuts over bottom of pan. Mix together cake mix, eggs, 1/2 cup water, oil, and 1/2 cup rum. Pour batter over nuts. Bake 1 hour. Cool. Invert on serving plate.
  • Prick top. Spoon and brush glaze evenly over top and sides. Allow cake to absorb glaze. Repeat until glaze is used up.

I just wanted to share this cake with you that I made last Christmas that I'll be making again for this years' festivities. It was so good, that I'm pretty sure it will become a Christmas tradition. And it's a good one because it's loaded with booze- rum to be exact. You can use any type bundt pan.

Allow cake to absorb glaze and repeat until all glaze is used, this may take up to 10 minutes. Allow to cool completely before serving. Tastes best on day 2, so make it a day in advance if possible. Store any uneaten cake in an airtight container at room temperature.
