My mother-in-law shared this recipe with me. It's something different and very simple to make. My husband, Rich, and I especially like it because corn is our favorite vegetable.

1 package (16 ounces) frozen corn, thawed
1 large tomato, seeded and chopped
4 tablespoons butter, divided
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
Dash cayenne pepper
1 cup whole milk
1 cup shredded sharp cheddar cheese
4 large eggs, separated
1/4 teaspoon cream of tartar

Steps:

  • In a skillet, saute corn and tomato in 1 tablespoon butter until tomato is heated through; set aside. In a large saucepan, melt the remaining butter; stir in flour, salt, pepper and cayenne until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Add cheese and the reserved corn mixture. , In a small bowl, beat egg yolks until thick and lemon-colored, about 3 minutes. Stir in 1/3 cup hot corn mixture; return all to the pan. Cool to room temperature. , In another bowl, beat egg whites until soft peaks form. Add cream of tartar: beat until stiff peaks form. Gently fold into corn mixture. , Transfer to a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until thermometer reads 160° and top is golden brown. Let stand for 5 minutes before serving.

3/4 cup sugar, divided
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
3/4 cup buttermilk
1 egg
2 teaspoons cinnamon
6 1/4 cups oil, divided

Steps:

  • Heat a deep-fryer to 374 degrees.
  • In a bowl, combine flour, 1/4 cup sugar, baking powder, baking soda, salt and nutmeg.
  • In another small bowl, combine/whisk together 1/4 cup oil, buttermilk and the egg; mix well to combine, add to flour mixture, and mix until very well combined with a wooden spoon.
  • Drop by teaspoonfuls into 6 cups hot oil (375 degrees); fry about 1-1/2 - 2 minutes, or until very light golden brown.
  • Remove, and drain on paper towel.
  • Roll in 1/2 cup sugar, mixed with cinnamon.
  • Note: It is impotant to keep the oil temperature at a steady 375 degrees, otherwise the doughnuts will be overdone, and won't have a light texture.

I found this recipe way back in 1965 in a magazine and have been making it since. You can add chopped ham, chopped onions to your egg mixture, but this was the original back then. Try our your favourite cheese.

50 soda crackers
10 slices cheddar cheese
5 eggs
3 1/2 cups 2% low-fat milk
1/2 teaspoon mustard powder
1/4 teaspoon pepper
1 pinch paprika

Steps:

  • Spray with oil a 12x8-inch baking dish.
  • Cover bottom of dish with a layer of soda crackers.
  • Add cheese slices.
  • Top with remaining crackers.
  • Beat together eggs, milk, mustard and pepper.
