HONEY DINNER ROLLS

Honey Dinner Rolls image

I first made these in 2000. These are my favorite dinner rolls! I got the recipe out of a cookbook that famous country singers contributed to. This was sent in by Steve Wariner. You'll have no room for dinner after you start eating these! I make my rolls a bit bigger, so of course my yield is considerably less then recipe states.

Time 2h15m

Yield 36 rolls

Number Of Ingredients 7

4 1/4-4 3/4 cups all-purpose flour
1 (1/4 ounce) package active dry yeast
1 1/4 cups milk
1/3 cup honey
1/4 cup margarine or 1/4 cup butter
1 teaspoon salt
2 eggs

Steps:

  • Combine 2 cups flour and yeast in a large mixer bowl. Heat milk, honey, margarine and salt just until warm (115 to 120°F) and margarine is almost melted, stirring constantly. Add to flour mixture; add eggs.
  • Beat at low speed of electric mixer for 30 seconds; scrape sides of bowl constantly. Beat for 3 minutes at high speed. Stir in as much remaining flour as you can mix in with a spoon.
  • Turn dough out onto lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 mins). Shape into a ball. Place dough in a greased bowl, then turn it once. Cover dough and let rise in a warm place till double (about 1 hour). Punch dough down; divide in half. Cover again; let rest 10 minutes.
  • Cut each dough half into 18 equal pieces. Roll into balls, and place in greased 2 1/2-inch muffin pans. Let rise until doubled (about 30 mins).
  • Bake in a 375°F oven for 12 to 15 minutes. Remove from pan. Cool on a wire rack.

Categories     Breads

Time 3h30m

Yield 24 rolls

Number Of Ingredients 9

1 (1/4 ounce) package active dry yeast (reg size)
1/4 cup water, very warm
1/3 cup sugar
1/4 cup butter or 1/4 cup margarine
1 teaspoon salt
1 cup milk, scalding hot
1 egg, lightly beaten
4 1/2 cups all-purpose flour, sifted
2 tablespoons butter or 2 tablespoons margarine, for brushing rolls, melted

Steps:

  • Sprinkle the yeast over very warm water in a large bowl. (Very warm water should feel comfortably warm when dropped on wrist or between 105-110°F on a candy thermometer) Stir until yeast dissolves.
  • Add sugar, the 1/4 cup butter or margarine and salt to hot milk and stir until the sugar dissolves and butter or margarine is melted. Cool mixture to 105-115°F.
  • Add milk mixture to yeast, then beat in egg. Beat in 4 cups of the flour, 1 cup at a time, to form a soft dough. Use some of the remaining 1/2 cup of the flour to dust a pastry cloth.
  • Knead the dough lightly for 5 minutes, working in the remaining flour (use it for flouring the pastry cloth and your hands).
  • Place dough in a warm buttered bowl; turn greased side up. Cover and let rise in a warm place until doubled in bulk, about 1 1/4 to 1 1/2 hours.
  • Punch dough down and knead 4 to 5 minutes on a lightly floured pastry cloth. Dough will be sticky, but use as little flour as possible for flouring your hands and the pastry cloth, otherwise the rolls will not be as feathery light as they should be.
  • Pinch off small chunks of dough and shape into round rolls about 1 1/2 to 1 3/4-inches in diameter. Place in neat rows, not quite touching, in a well-buttered 13- x 9- x 2-inch pan.
  • Cover rolls and let rise in a warm place until doubled in bulk, 30 to 40 minutes. Brush tops of rolls with melted butter or margarine, then bake in a moderately hot oven (375°F) 18 to 20 minutes or until nicely browned. Serve warm with plenty of butter.

Tips:

  • Use fresh, active dry yeast for best results. If you're using instant yeast, you can skip the proofing step and add it directly to the flour mixture.
  • Make sure your milk is warm, but not hot. Hot milk will kill the yeast.
  • Knead the dough until it is smooth and elastic, about 10 minutes. This will help develop the gluten and make the rolls light and fluffy.
  • Let the dough rise in a warm place until it has doubled in size, about 1 hour. This will give the yeast time to work and produce gas, which will make the rolls light and airy.
  • Roll out the dough to a 12x18 inch rectangle. This will make it easy to cut the rolls into even pieces.
  • Spread the softened butter evenly over the dough. This will help the rolls brown and give them a delicious flavor.
  • Sprinkle the cinnamon sugar mixture evenly over the butter. This will give the rolls a sweet and cinnamony flavor.
  • Roll up the dough tightly, starting from the long side. This will help keep the filling inside the rolls.
  • Cut the dough into 12 even pieces. This will make it easy to arrange the rolls in the baking dish.
  • Place the rolls in a greased 9x13 inch baking dish. This will give them room to rise and bake evenly.
  • Let the rolls rise in a warm place for 30 minutes. This will give the yeast time to work and produce gas, which will make the rolls even lighter and fluffier.
  • Bake the rolls in a preheated oven at 375 degrees Fahrenheit for 25-30 minutes, or until they are golden brown. This will give them a delicious crust and a fluffy interior.

Conclusion:

These Golden Honey Sweet Rolls are the perfect treat for any occasion. They're soft, fluffy, and filled with a delicious cinnamon sugar filling. They're also easy to make, so you can enjoy them anytime you want. Whether you're serving them for breakfast, brunch, or dessert, these rolls are sure to be a hit.
