1 1/2 cups shredded carrots (2 to 3 medium)
1 cup shredded peeled apple
1/2 cup coconut
1/2 cup raisins
3/4 cup sliced almonds

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 18 regular-size muffin cups or grease with shortening. In large bowl, beat eggs, oil, milk and vanilla with wire whisk until well blended. 1 1/2 cups wheat bran
3/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 large egg
3/4 cup brown sugar, lightly packed
1/4 cup canola oil or 1/4 cup extra virgin olive oil
1 cup buttermilk
2 tablespoons molasses
1/2 cup golden seedless raisins
1/2 cup finely chopped dried apricot

Steps:

  • Preheat oven to 375 F degrees.
  • In a mixing bowl, combine wheat bran, flour, baking soda, salt and baking powder; stir well to blend.
  • In a separate mixing bowl, beat egg.
  • Add brown sugar, oil, buttermilk, molasses, raisins and chopped dried apricots and mix well to blend.
