Time 25m

Yield 20 empanadas, 10-20 serving(s)

Number Of Ingredients 3

2 (7 1/2 ounce) cans refrigerated buttermilk biscuits (not the layered varieties)
flour or cornmeal, for rolling
olive oil, for brushing (can also use one egg)

Steps:

  • Adjust oven rack to center.
  • heat oven to 400 degrees.
  • or heat deep fryer to 450 degrees.
  • Separate biscuits onto a flour or cornmeal-coated work surface.
  • roll dough flat( about a 5-inch circle ), use 2 Tbs. of (desired)filling and leave a 1/2-inch border.

  • (At this point, can be frozen up to 2 weeks.)
  • Brush tops with oil(or egg).
  • Bake until golden.
  • 16 to 20 minutes (longer if frozen).
  • or fry about 2 minutes till golden brown.

Tips:

  • Make sure the water is warm, but not hot. Hot water will kill the yeast and prevent the dough from rising.
  • If you don't have a stand mixer, you can make the dough by hand. Just be sure to knead it for at least 10 minutes, until it is smooth and elastic.
  • Let the dough rise in a warm place for at least an hour, or until it has doubled in size.
  • When rolling out the dough, be sure to use a lightly floured surface to prevent it from sticking.
  • If you are using a filling that is wet, be sure to drain it well before adding it to the empanadas. This will prevent the dough from becoming soggy.
  • Fry the empanadas in hot oil until they are golden brown and crispy.
  • Serve the empanadas with your favorite dipping sauce.
