GOLDEN BANANA BREAD
I made this last night with my daughter. Who is only two years old, but already loves to cook & bake with her mama. This banana bread is one of my favorites. Very moist, with a slightly crispy top crust. It was a great nighttime snack. And even better warmed up with a little butter the next morning!

Steps:
- 1. Grease your loaf pan. I used a 9 x 5. You can also use (2) 8 x 4's. Or, (4) mini loaf pans. Preheat oven to 350 degrees.
- 2. In a large mixing bowl combine sugar and softened butter. Add eggs and mix well.
- 3. Stir in your mashed bananas, milk, and vanilla. Beat until smooth.
- 4. Stir in your dry ingredients until just moistened. Be careful not to over mix.
- 5. Bake for one hour, or for mini loaves - about 45 minutes will do.
GOLD MEDAL FLOUR'S BEST-EVER BANANA BREAD
The recipe is not mine. It's from a bag of Gold Medal Flour, so if you don't care for it...that's o.k. It certainly has what it takes to make it a keeper for me, though. No muss. No fuss. It's light, moist, and makes two perfect 8 X 4 loaf pans. Takes about an hour to bake. P.S. It needs an added banana to really enhance the flavor, though.

Steps:
- Preheat the oven to 325°F. Butter an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Dust the pan with flour, tapping out the excess.
- Sift together the flour, baking powder, and baking soda.
- In the bowl of an electric mixer fitted with the paddle attachment, mix together the butter, olive oil, and sugar at low speed. Increase the speed to medium and add the eggs one at a time, beating well after each addition. Mix in the mashed banana. Add the flour mixture and mix just until combined. Scrape the batter into the prepared pan, smoothing the top with a spatula.
- Bake the cake for 55 to 60 minutes, until the top is golden brown and a toothpick inserted in the center of the cake comes out clean. Cool the cake in the pan on a wire rack for 15 minutes. Unmold the cake and cool completely on the rack. Store in an airtight container at room temperature for 3 days, 1 week refrigerated, or 2 months frozen.
Tips:
- Use overripe bananas. The riper the bananas, the sweeter and more flavorful your banana bread will be.
- Don't overmix the batter. Overmixing can result in a tough, dense loaf of bread. Mix just until the ingredients are combined.
- Let the batter rest for 5-10 minutes before baking. This will allow the gluten to relax and result in a more tender loaf of bread.
- Bake the bread at 350 degrees F for 50-60 minutes. Or until a toothpick inserted into the center comes out clean.
- Let the bread cool completely before slicing and serving. This will help the bread to hold its shape and prevent it from crumbling.
Conclusion:
Golden banana bread is a classic recipe that is easy to make and always a crowd-pleaser. By following these tips, you can make sure your banana bread turns out perfectly every time. So next time you have some overripe bananas on hand, be sure to give this recipe a try!
