1/4 cup brown sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon nutmeg
1 (9 inch) double crust pie crusts
1/4 cup nuts, chopped
2 tablespoons rum
2 tablespoons butter
1 cup sugar
2 tablespoons cornstarch
3/4 cup water
1/4 cup water, cold
1/2 teaspoon cinnamon
1/2 cup rum

7 1/2 cups granny smith apples, peeled, cored, and sliced (about 8 medium apples)
1 teaspoon lemon rind, grated
1 tablespoon lemon juice, fresh not bottled
1/4 teaspoon ground nutmeg
1/4 cup light rum
1 tablespoon cornstarch
1 unbaked 9 inch pie shell (I usually make my own or use a refrigerated pie crust)
1/2 cup all-purpose flour
1/2 cup sugar
1/4 cup sliced almonds

3/4 cup plus 2 tablespoons apple juice, divided
3/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon apple pie spice
2 tablespoons cornstarch
1/4 teaspoon vanilla extract
CRUST:
2-1/2 cups all-purpose flour
1 teaspoon salt
1 cup cold butter
6 to 8 tablespoons ice water

Steps:

  • In a large saucepan, combine apples, 3/4 cup apple juice, sugar, cinnamon and apple pie spice; bring to a boil over medium heat, stirring occasionally. Combine cornstarch and remaining apple juice; add to saucepan. Return to a boil, stirring constantly. Cook and stir 1 minute more or until thickened. Remove from the heat. Stir in vanilla.
