1/2 cup heavy cream
1/2 teaspoon vanilla

Steps:

  • Heat heavy cream in a saucepan over low-medium heat until hot but not simmering.
  • Add chocolate and stir until melted.
  • Add vanilla and stir.
  • Transfer to fondue pot and serve with fresh fruit and pound cake.

Another recipe I adapted from a local fondue restaurant. This is comforting in winter and yet goes perfect with fresh summer fruits. Also a great way to serve dessert at a dinner party. One year for our neighbors for Christmas we layered all the ingredients substituting marshmallows for the marshmallow cream and w/o the cream in fancy gift bags. We tied it with ribbon and a tag explaining how to finish the recipe. What a hit!!!

1/2 cup milk chocolate chips
1/2 cup double chocolate chips
0.5 (7 ounce) jar marshmallow cream
1/2 cup caramels or 1/2 cup caramel apple dip
1/2-2/3 cup cream

Steps:

  • Melt caramels with 1/2 c cream.
  • Add chips and save marshmallow cream for last.
  • Use remaining cream to control thickness of fondue.
  • Place fondue in electric fondue pot on low.
  • We add 1/2 c loosely chopped pecans to make a turtle fondue.
  • Serve with bananas, strawberries, angel food cake, bite size brownies, mini chocolate chip cookies, marshmallows, pretzels, apples etc.

1 (14 ounce) can sweetened condensed milk (not evaporated milk)
1/4 cup granulated sugar
2 tablespoons water
1 cup heavy cream
3 (1 1/2 ounce) bars godiva milk chocolate or 3 (1 1/2 ounce) solid ivory white chocolate
1/2 cup unsalted butter, cut into small pieces
1/4 teaspoon salt
fresh fruit (whole strawberries, banana chunks, peach slices, kiwi chunks, pineapple chunks)
1 poundcake, cut into cubes
godiva milk chocolate pieces

Steps:

  • Make the dulce de leche:.
  • Pour sweetened condensed milk into top of double boiler. Place over boiling water. Turn heat to low and simmer 1 1/2 hours or until thick and caramel-colored, stirring occasionally.
  • Whisk until smooth. Keep warm.
  • Make the chocolate caramel cream:.
  • Heat sugar and water in small saucepan. Bring mixture to a boil. Cook without stirring until syrup becomes caramel color. Remove from heat and gradually stir in heavy cream.
  • Return to heat and stir until syrup is dissolved. Remove from heat.
  • Break up chocolate and add to cream mixture. Let stand 1 minute. Whisk until smooth. Gradually stir in butter and salt.
  • To serve: Whisk warm dulce de leche into chocolate caramel cream until smooth. Pour into fondue pot to keep warm. Serve with fruit, pound cake cubes and/or Godiva demitasse pieces. Makes about 2 1/2 cups.

1 cup whipping cream

Two 4-ounce good quality semi-sweet chocolate bars
One 15.85-ounce jar prepared dulce de leche (about 1 1/3 cups)
Kosher salt
Marshmallows, for dipping (optional)
Graham crackers, for dipping (optional)
Fresh fruit, such as berries, pineapple chunks and red and/or green grapes, for dipping (optional)
Cookies, shortbread or vanilla wafers, for dipping (optional)

Steps:

  • Build a medium-low campfire that has a grate for cooking. Break the chocolate bar into small pieces using the handle of a wooden spoon (or you can smack it against a picnic bench).
  • Unwrap and add the pieces to a medium saucepan along with the dulce de leche, 1/2 cup and 1 teaspoon salt.
  • Place the saucepan, on the grate and over the fire, and cook, stirring occasionally, until the chocolate melts and the sauce is completely smooth, about 5 minutes. Steps:

  • 1. In medium pan, mix the sugar and 1/4 cup of water. Cook over medium low heat, stirring til sugar dissolves. Increase heat to medium and cook without stirring, swirling the pan and occasionally brushing down the sides with a wet pastry brush to remove any sugar crystals, til syrup turns a medium dark amber, about 3 minutes.
  • 2. Carefully pour in the warm cream, stirring til caramel is dissolved and smooth. The cram will bubble up. Stir in rum and salt. Increase heat to medium high and boil, stirring occasionally til caramel cream or dulce de Leche is smooth and thick enough to coat the back of a spoon, about 10 minutes.
  • 3. Carefully transfer to a ceramic or enameled cast iron fondue pot. Regulate the heat under the pot, if possible, so that the fondue remains warm, not hot. Serves 6 to 8 or makes 2 cups.
