MARINATED GOAT CHEESE

These are especially nice to have on hand for adding to salads and quick toasted open-faced sandwiches. Place a round on a piece of bread, pop it in a toaster oven and toast 3 to 4 minutes.

Categories     easy, dips and spreads

Time 15m

Yield 4 or 5 rounds of marinated goat cheese

Number Of Ingredients 7

1 teaspoon mixed red, black and white peppercorns, lightly crushed
2 garlic cloves, peeled
2 bay leaves, broken into pieces
About 3 ounces goat cheese (in a log)
2 sprigs thyme
2 sprigs rosemary
Extra virgin olive oil as needed

Steps:

  • Place the peppercorns, garlic cloves and bay leaves in a clean, sterilized wide-mouthed jar. Pour in a film of olive oil.
  • Cut the goat cheese into rounds 1/2 inch thick (I get neat rounds using unflavored dental floss to cut through the cheese). Place one round in the jar and drizzle on some olive oil. Stack the remaining rounds, drizzling oil onto each round before topping with the next. Add the thyme and rosemary sprigs to the jar and pour in olive oil to cover the goat cheese rounds completely. Cover the jar and leave at room temperature for several hours, then refrigerate.

HERB AND LEMON GOAT CHEESE SPREAD

Herb and Lemon Goat Cheese Spread image

Yield Serves 8

Number Of Ingredients 6

5 ounces (about 3/4 cup) soft fresh goat cheese, room temperature
2 teaspoons chopped fresh thyme
2 teaspoons grated lemon peel
1 garlic clove, minced
5 teaspoons olive oil
16 French-bread baguette slices, toasted

Steps:

  • Place goat cheese in small bowl. Mix thyme, lemon peel and garlic in another small bowl; season with ground black pepper. Mix half of thyme mixture into goat cheese. Add olive oil to remaining half of thyme mixture. Form cheese into 2 1/2-inch round; flatten slightly. Place in center of plate. Spoon oil-thyme mixture over top of cheese. Surround cheese with baguette slices and serve.

Tips:

  • Use fresh goat cheese for the best flavor and texture.
  • If you can't find fresh thyme, you can use dried thyme, but use half the amount.
  • To make the lemon oil, use a microplane zester to grate the lemon zest. Be sure to only grate the yellow part of the lemon, as the white pith is bitter.
  • You can use any type of peppercorns you like. Black peppercorns are the most common, but you can also use white, green, or pink peppercorns.
  • If you don't have a cheese mold, you can use a small bowl or ramekin.
  • To serve, let the goat cheese sit at room temperature for 30 minutes before serving. This will allow the flavors to meld and the cheese to soften slightly.

Conclusion:

This goat cheese with thyme, peppercorns, and lemon oil is a delicious and easy-to-make appetizer or snack. It's perfect for a party or potluck, or to enjoy on a lazy afternoon. The goat cheese is creamy and tangy, with a hint of thyme and lemon. The peppercorns add a bit of spice, and the lemon oil rounds out the flavors. This goat cheese is sure to be a hit with everyone who tries it!
