1 cup pecans (1/4 pound)
1 tablespoon unsalted butter, melted
1/2 teaspoon sugar
1 (11-ounces) log soft goat cheese
1 teaspoon minced rosemary
1 teaspoon coriander seeds, crushed with side of a large knife, then chopped
About 50 to 60 large flat-leaf parsley leaves

Steps:

  • Preheat oven to 400°F with rack in upper third.
  • Toss pecans with butter, sugar, and 1/2 teaspoon salt, then toast in a 4-sided sheet pan until fragrant and a shade darker, 8 to 10 minutes. Transfer to a plate and cool completely.

Steps:

  • Preheat oven to 375 degrees F.
  • Take a 2 1/2-inch round cookie cutter and cut out 12 rounds from 2 sheets of puff pastry. Take a 12 hole mini muffin pan and place rounds of dough into each hole, pressing gently to form a cup and giving room for the filling. Cover with plastic wrap and keep the prepared pan in the refrigerator or freezer (depends how long until you need it).
  • In a skillet add butter and oil. Throw in the onions and cook gently until softened and caramelized, stirring frequently for about 15 to 20 minutes. Once cooked add the scallions and chives. Set aside to cool slightly.

3/4 cup chopped shallots (3 to 4 shallots)
10 1/2 ounces garlic-and-herb soft goat cheese (recommended: Montrachet}
1 cup heavy cream
3 extra-large eggs
1/4 cup chopped basil leaves
1/8 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust, put the flour and 1/4 teaspoon salt in the bowl of a food processor fitted with the steel blade. Cut 12 tablespoons (1 1/2 sticks) of the butter into large dice, add to the bowl, and pulse until the butter is the size of peas. With the machine running, add the ice water all at once and process until the dough becomes crumbly. Don't overprocess. Dump the dough out on a floured board, gather it loosely into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
  • Roll the dough on a well-floured board and fit it into a 9-inch tart pan with a removable sides, rolling the pin over the top to cut off the excess dough. 2 cups fresh cranberries, about 8 oz
3/4 cup sugar
2/3 cup water
1 cinnamon stick
1/4 teaspoon nutmeg
3 slices bacon, uncooked
3 large eggs
4 ounces fresh goat cheese
1 cup heavy cream
1/2 cup milk
1 pinch kosher salt
1/4 teaspoon Tabasco sauce
1/2 teaspoon Worcestershire sauce
1 cup Fisher® Pecan Halves, coarsely chopped, divided
1 small bunch chives, optional

Steps:

  • Preheat the oven to 350°F. Spray the insides of 18 cups in a muffin pan with nonstick cooking spray. Unroll the pie crusts and cut with a 3 1/2-inch biscuit cutter. Line the inside of the muffin pans with the crust circles and refrigerate until ready to fill. The crusts won't go all the way to the top of the cups; this is fine.
  • Cook the cranberries: Combine the cranberries, sugar, water, cinnamon stick and nutmeg in a medium pot. Bring to a boil over medium-high heat.   • Make the tartlet filling: While the bacon is cooking, combine eggs, goat cheese, heavy cream, milk, pinch kosher salt, Tabasco and Worcestershire sauce in a blender container. 1 sweet onion (such as Vidalia®), thinly sliced
⅓ cup balsamic vinegar
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
4 ounces crumbled goat cheese

Steps:

  • Cut thawed puff pastry into six 3- to 4-inch rounds using a cookie cutter. Roll edges of each pastry slightly to form 6 small tarts. Set aside.
  • Heat olive oil in a skillet over medium-high heat; stir in sweet onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. 4 leeks , trimmed, halved and finely sliced
large knob of butter
2 tbsp thyme leaves and 4 nice sprigs
375g block puff pastry
4 slices goat's cheese (with a rind)
truffle oil or walnut oil (optional)

Steps:

  • Wash the leeks in a colander but don't worry about drying them as you want a bit of water clinging on. Heat the butter in a wide saucepan until sizzling, then add the wet leeks and thyme leaves plus salt and pepper. Sweat the leeks really gently for 20-25 mins until they have practically melted but not coloured, adding a little more butter if needed. Set aside and allow to cool.
  • Heat oven to 220C/200C fan/gas 7. Roll the pastry out to the thickness of a £1 coin. Cut out 4 saucer-size circles and place on a baking sheet. Spread the leeks over the circles leaving a slight border around the edge. Put a slice of goat's cheese in the middle of each tart and top with a thyme sprig. Pinch the pastry edge together to slightly encase the leeks, then bake the tarts for 25 mins until puffed up and golden. Serve hot and drizzled with flavoured oil if you have it.

18 Prepared (2 inch) Phyllo Tartlet Shells, Baked (or can use prepared shells)

Steps:

  • Put pecans in a single layer in a pie dish. Place dish in cold oven. Turn oven on to preheat to 375. Toast pecans about 7-8 minutes wile oven is preheating. Line a jelly roll pan with foil. Place bacon in a single layer on pan. Bake for about 20 minutes until bacon is crisp. Remove bacon to paper towel lined plate to drain, set aside. In a small bowl, whisk egg white until frothy. Stir in toasted pecans to coat. Melt jelly in a small heavy duty pan over low heat. Use a fork, or slotted spoon to lift pecans into melted jelly; stir to coat pecans.
